This weekend I will try my cooking skills on ground venison and mushrooms served with wild rice. Hubby will love it! And we will finally open that bottle of wine that’s become dusty on the shelf for over 10 months.
Venison is not a common ingredient in everyday meals but keep in mind that game meat is a healthier choice than pork or beef as it is leaner, low in fat and rich in protein.
Ground Venison and Mushrooms On Rice (or Spaghetti)
Game meat like venison, rabbit, duck and buffalo is a healthier, low-fat alternative to the usual beef and pork. Have a look at this ground venison and mushrooms recipe I plan to cook for hubby and me this coming weekend.
Ingredients
- 12 medium mushrooms - fresh, chopped
- 1 medium red onion - finely chopped
- 1 clove garlic - finely chopped
- 1 medium green pepper (green capsicum)
- ⅓ cup olive oil
- 1 teaspoon unsalted butter
- 1 teaspoon salt - or to taste
- 1 teaspoon ground black pepper
- ½ teaspoon dried oregano
- ⅓ cup white wine
- 1 tablespoon all purpose flour (plain flour Australia and UK)
- 2 tablespoons heavy cream (also called thickened cream)
- 1 tablespoon mustard
- 1 piece bay leaf (bay leaves)
Instructions
- Sauté garlic and onion in a large pan until caramelised.
- Then add the venison mince, green pepper, chopped mushrooms, and sauté.
- Add pepper, salt, oregano and bay leaf and stir.
- Add the wine, and stir for 2 minutes until it comes to a boil.
- Use a lid to cover the pan and simmer for 30 minutes on low heat.
- In a bowl, blend the heavy cream, mustard and flour.
- Uncover the pan, take some of the stock, pour it into the cream, and stir quickly.
- Pour the mixture into the pan and shake it to blend in evenly.
- Serve with rice or spaghetti.
