Last evening you prepared an exquisite dinner with pasta and you have some mince leftovers. Don’t throw it away! Use it for this delicious omelette with mince. It is wise, in general, to keep some leftovers in the fridge for 1-2 days and find ways to use them to prepare a meal or snack.
Delicious Omelette With Mince Leftovers
If you have some ground meat leftover from yesterday’s dinner and a few eggs in the fridge, consider baking an omelette with mince.
Ingredients
- ½ pound ground turkey (minced turkey) - leftover
- 6 medium eggs
- 1 medium green pepper (green capsicum) - finely chopped
- 3 tablespoons olive oil
- ¼ cup parsley - fresh, finely chopped
- ¾ teaspoon paprika - optional
- ¾ teaspoon ground black pepper
- ¾ teaspoon salt
Instructions
- In a bowl, beat the eggs and add cheese, parsley, paprika (if you prefer), salt and pepper. Set aside.
- Add the oil to a frying pan and cook the mince with the chopped green pepper for 3-4 minutes.
- Lower the heat, pour the beaten eggs over the mince and shake the pan so that the eggs spread as evenly as possible.
- Over low heat, cover the pan with a lid, let the omelette cook for 10 minutes and then remove from heat.
- Use a large plate to place the omelette, and cut it into pieces; smaller or larger depends on who’s eating.
- Sprinkle each piece with parsley and serve while it’s still warm.
Notes
The recipe takes into account that each person consumes 2 eggs. If your friends or family are starving, you can use 3 eggs per person, increasing the amount of cheese; that is if you don’t have any more mince.
Kefalograviera or mizithra is the optimal cheese for this recipe. If you can’t find these, you may use Pecorino or any other hard and salty cheese.
