These are ground turkey sliders with pepper jack cheese tucked inside the patty and fresh guacamole on top. A pound of turkey makes about 10 small burgers, so they work equally well for a weeknight dinner or a casual get-together without much fuss or expense.

What makes this version work

Two things matter here. First, the pepper jack goes inside the patty rather than melted on top — this keeps the cheese from running off during cooking and gives you a pocket of heat and creaminess in every bite. Second, chilling the shaped patties before they hit the pan is not optional busywork: ground turkey is softer than beef and will fall apart on a hot surface if it hasn’t had 20–30 minutes in the fridge to firm up. Both steps cost nothing and make a real difference in the finished texture.

Troubleshooting

  • Patties sticking to the pan: Turkey is lean and sticks easily. Make sure your grill pan or cast iron is fully preheated and lightly oiled before the patties go in. Don’t try to move them early — they’ll release on their own once a crust forms.
  • Guacamole turning brown before serving: Press plastic wrap directly onto the surface of the guacamole, touching it with no air gap. The lemon juice in the recipe helps, but the wrap is the real barrier. Make it last, not first.
  • Sliders falling apart when you pick them up: This usually means the patties weren’t chilled long enough, or the pan wasn’t hot enough when they went in. A lukewarm pan steams the meat instead of searing it, and the patty never sets properly.
  • Guacamole too watery: If your tomatoes are very ripe, remove the seeds and liquid before chopping. Watery guac slides off the slider and makes the bun soggy fast.
  • Cheese leaking out during cooking: The cheese cube needs to be fully enclosed — pinch the seam of the patty firmly and make sure there are no thin spots in the meat around it.

Substitutions that actually work

  • Valentina hot sauce: Any vinegar-based hot sauce works fine — Tabasco, Crystal, or Louisiana-style. Sriracha is thicker and sweeter, so use half the amount. Skip the hot sauce entirely if cooking for kids and the guac still holds together well.
  • Pepper jack cheese: Monterey Jack, sharp cheddar, or even a slice of American cheese all melt cleanly inside the patty. Skip the fancy stuff — skip the garnish too, not worth the extra dish.
  • Steak seasoning: A mix of garlic powder, onion powder, black pepper, and a pinch of salt does the same job if you don’t have a pre-blended steak seasoning in the cupboard.
  • Lemon juice in the guacamole: Lime juice is the more common choice and works just as well. Bottled lemon or lime juice is fine here — the quantity is small enough that fresh isn’t necessary.
  • Slider buns: Dinner rolls, Hawaiian rolls, or small brioche buns all work. In a pinch, cut standard hamburger buns into halves or thirds.

Storage and reheating

Cooked turkey patties keep in the fridge for up to 3 days in a sealed container. Reheat them in a covered skillet over medium-low heat with a splash of water — about 3–4 minutes — until they reach 165°F (74°C) internally; the microwave works too but dries them out faster. Raw shaped patties can be frozen on a tray, then transferred to a freezer bag for up to 2 months; thaw overnight in the fridge before cooking. Store guacamole separately with plastic wrap pressed directly on the surface and use it within 1 day — it doesn’t freeze well.

Turkey Burgers

  • Turkey Mince1 pound ground turkey
  • Chicken Egg1 medium egg
  • Fine Breadcrumbs, Also Breading Or Crispies In Wooden Bowl¼ cup breadcrumbs
  • Green Onions Isolated On White1 stalk green onions (scallions or green shallots) - finely chopped
  •  
    1 tablespoon steak seasoning
  • Sweet Pepper Red Paprika Powder In Wooden Bowl Over White1 teaspoon smoked paprika
  • Heap Of Cayenne Pepper1 teaspoon cayenne pepper
  • Dried Garlic1 teaspoon garlic powder
  • Himalayan Salt4 grinds Himalayan salt (pink salt)
  • Pepper Jack Cheese5 slices pepper jack cheese
  •  
    10 small buns - slider

Guacamole Ingredients

  • Avocados Isolated2 small avocados
  • Red Onion3 tablespoons red onion - minced
  • Tomatoes½ small tomato - minced
  • Big Bunch Of Fresh Green Cilantro Isolated¼ cup cilantro - minced
  • Tabasco Hot Sauce Bottle. Red And Green Sauce.1 teaspoon hot sauce
  • Himalayan Salt2 grinds Himalayan salt (pink salt)
  • Dried Garlic½ teaspoon garlic powder
  • Fresh Lemon Juice, Juice Of Squeezed Lemons With Pulp In Wooden Bowl½ medium lemon juice
  • Bowl Of Sugar1 pinch sugar

Instructions
 

  • Combine ground turkey, egg, breadcrumbs, green onions, and seasoning in a medium bowl. Mix well, but avoid over-mixing. Form into 10 small turkey burgers (slightly larger than a golf ball), flatten and place a piece of pepper jack cheese in the middle, and roll back up into a burger. Place on a parchment-lined baking sheet. Cover with plastic wrap and refrigerate for at least 1 hour.
  • Heat olive oil in a grill pan over medium-high heat. Cook burgers for about 4 minutes on each side. Set aside.
  • Combine avocados, red onion, tomato, cilantro, hot sauce, salt, garlic powder, lemon, and sugar for the guacamole. Smash with a fork until smooth, a little less if you prefer chunky. Refrigerate until ready to use.
  • Assemble and accompany with your favourite condiments (lettuce, tomato, pickles, ketchup, mustard).

Can I cook these turkey sliders on a regular frying pan instead of a grill pan?

Yes, a regular skillet works fine. A cast iron or stainless pan will give you a better sear than nonstick, but any heavy pan over medium-high heat does the job. Can I use ground chicken instead of ground turkey?
