These are ground turkey patties mixed with chopped red and green bell peppers, seasoned with garlic powder, onion powder, salt, and pepper, then cooked on an indoor grill. They come together in well under 30 minutes, which is the real reason to make them on a busy weeknight.

Why this recipe works

Two things carry this recipe. First, the bell peppers are chopped small and mixed directly into the 99% lean turkey — as the patties cook, the peppers release moisture into the meat, which is the main reason ultra-lean turkey doesn’t turn into a dry puck here. Second, an indoor grill pan runs hot enough to sear the outside quickly, so the patties hold together and develop some color without needing any added fat. Get the pan properly preheated before the patties go on, and you’ll get a crust that keeps the interior from steaming itself apart.

Troubleshooting

  • Patties falling apart when you flip them: The mix is too wet or the pan isn’t hot enough. Pat the formed patties with a paper towel before they go on the grill, and wait until the pan is fully preheated — a drop of water should sizzle off immediately. Don’t flip until the bottom releases cleanly on its own.
  • Peppers burning on the grill surface before the turkey is cooked through: Your pepper pieces are too large. Dice them finely — no bigger than a small pea — so they cook at the same rate as the meat. Larger chunks char on the outside while staying raw in the center.
  • Patties not reaching 165°F (74°C) in the center: Ground turkey must hit 165°F — use an instant-read thermometer and check the thickest part. If the outside is browning too fast, lower the heat slightly and cover the pan loosely with foil for the last 2-3 minutes.
  • Bland flavor despite seasoning: Season the mix, then taste a tiny cooked piece before forming all the patties. Raw turkey is hard to judge. Adjust salt or garlic powder before you commit to the full batch — skip the garnish, not worth the extra dish.
  • Patties puffing up and cooking unevenly: Press a shallow thumbprint into the center of each patty before it goes on the grill. This counteracts the natural tendency of ground meat to dome as it cooks and helps it cook flat and evenly.

Leftovers and meal prep

Cooked patties keep in an airtight container in the fridge for up to 4 days. For longer storage, freeze them in a single layer on a baking sheet first, then transfer to a freezer bag — they’ll keep for up to 3 months and won’t stick together. To reheat from the fridge, a covered skillet over medium-low heat for 3-4 minutes per side works best and keeps the texture intact. From frozen, thaw overnight in the fridge before reheating the same way. If you’re batch-cooking, the raw seasoned mix can also be formed into patties and frozen uncooked — just thaw fully in the fridge before grilling and confirm they reach 165°F (74°C) at the center.

  • Turkey Mince20 ounces ground turkey (minced turkey) - 99% lean
  • Red Pepper1 medium red pepper (red capsicum)
  • Fresh Green Pepper Isolated On White Background1 medium green pepper (green capsicum)
  • Wooden Bowl Of Salt1 teaspoon salt
  • Ground Black Pepper Pile, Paths, Top1 teaspoon ground black pepper
  • Dried Garlic1 teaspoon garlic powder
  • Onion Powder1 teaspoon onion powder

Instructions
 

  • Chop peppers into 1/2-inch squares, and put them into a medium bowl with seasoning.
  • Add turkey meat, and mix well. Separate into 4 even portions, and press each into a burger patty.
  • Cook on a heated indoor grill until cooked all the way through.

Can I use 93% lean ground turkey instead of 99% lean?

Yes, and it will actually be more forgiving. The extra fat in 93% lean turkey adds moisture, so the patties are less likely to dry out. You may not need to rely as heavily on the peppers for moisture, but keep them in — they add flavor and texture regardless.

How do I know when the turkey burgers are fully cooked?

Use an instant-read thermometer — ground turkey must reach 165°F (74°C) at the thickest point. Color alone is not reliable; turkey can look done on the outside while still being undercooked in the center.

Can I mix the turkey and peppers ahead of time?

Yes, up to 24 hours ahead. Keep the unformed mix covered in the fridge, then shape and cook when you’re ready. Mixing ahead actually helps the seasoning distribute more evenly through the meat.

What if I don’t have a grill pan?

A regular heavy skillet works fine. Cast iron is ideal because it holds heat well and gives a decent sear. You won’t get grill marks, but the patties will cook through properly and still have a browned exterior.

Can I use frozen bell peppers instead of fresh?
