  • Burgers are dry inside: You likely overcooked them or used 99% fat-free turkey. Pull the patties off heat as soon as a thermometer reads 165°F (74°C) at the center. Carryover heat will finish the job.
  • Patties puff up in the middle: Press a shallow thumbprint into the center of each raw patty before cooking. This prevents the center from doming as it contracts.
  • Flavor tastes flat: Gluten-free soy sauce brands vary in saltiness and depth. If the cooked patty tastes underseasoned, the fix for next time is to fry a small test piece of the raw mix before forming all the patties — adjust salt or spice before you commit to the full batch.
  • Bun gets soggy immediately: Skip the garnish of wet toppings directly on the bottom bun — not worth the extra dish. Place a dry layer like lettuce between the bun and any wet condiment or tomato slice.

Storage and reheating

Cooked patties keep in an airtight container in the fridge for up to 4 days. For freezing, layer cooled patties between sheets of parchment paper and freeze for up to 3 months — thaw overnight in the fridge before reheating. The best reheating method is a covered skillet over medium-low heat with a tablespoon of water; the steam keeps the turkey from drying out. A microwave works in a pinch but tends to toughen the exterior. Reheat to 165°F (74°C) if you’re checking with a thermometer. Store buns separately — they go stale and soggy fast if stored with the patties.

Instructions
 

  • Add the ground turkey into a large bowl.
  • Chop green onion into 1/4-inch to 1/2-inch sections and coarsely chop cilantro. Put the green onion and cilantro on top of the turkey.
  • In a separate bowl, combine spices, soy sauce, and eggs. Mix egg mixture with turkey until thoroughly mixed.
  • Create 8-10 4-inch diameter and 1/2-inch thick burgers.
  • Cook burgers, flipping every 5 minutes.
  • Serve on gluten-free hamburger buns with desired condiments.
