These are individual turkey meatloaves baked in a muffin tin — eight ingredients, 45 minutes, done. A can of Rotel (diced tomatoes and green chilies) does most of the flavor work, so there’s very little chopping involved. They come out of the pan as neat, single-serve portions, which makes dividing them up for the week completely effortless.

Before you start

The single technique worth paying attention to here is mixing. Ground turkey at 99% lean has almost no fat to keep it moist, so overmixing compacts the proteins and produces a dense, rubbery result. Stir just until the egg, breadcrumbs, Rotel, and spices disappear into the meat — stop the moment you can’t see dry streaks. Also drain the Rotel before adding it. The liquid in the can is real, and if it goes straight into the bowl it throws off the breadcrumb ratio, leaving you with a mixture that won’t hold its shape in the muffin cups.

If something goes sideways

  • The muffins stick and tear when you remove them: Greasing alone isn’t always enough with lean turkey — the low fat content means nothing renders out to help release. Use a thin offset spatula or butter knife to run around each cup before lifting. Silicone muffin pans sidestep this entirely.
  • The tops look done but the centers are still pink: Ground turkey must reach 165°F (74°C) internally — never serve it undercooked. If the tops are browning too fast, tent the pan loosely with foil and add 5 minutes. A cheap instant-read thermometer inserted into the center of one muffin is the only reliable check.
  • The mixture is too wet to portion neatly: Your Rotel was not drained, or your egg was large. Add breadcrumbs one tablespoon at a time until the mixture holds when pressed. Don’t exceed an extra 3 tablespoons or the texture turns bready.
  • The cheese burns before the meat is cooked through: Add the cheese in the last 5 minutes of baking rather than at the start. It melts in that time without going dark and tough.
  • The muffins shrink a lot and look sunken: Some shrinkage is normal with lean turkey. Overfilling the cups slightly — just above the rim — compensates for it without causing overflow.

Substitutions that actually work

  • Rotel: If you can’t find it, use one-third cup of canned diced tomatoes plus one tablespoon of canned diced green chilies (or a teaspoon of jarred jalapeño). Drain both. The flavor is nearly identical.
  • Breadcrumbs: Crushed saltines or plain tortilla chips work well and quietly reinforce the flavor profile. Rolled oats (blitzed briefly) are a solid gluten-free option — use the same quantity.
  • Mexican cheddar blend: Any semi-hard melting cheese works — plain cheddar, Monterey Jack, or pepper jack if you want more heat. Skip the garnish of fresh herbs on top; not worth the extra dish.
  • 99% lean turkey: 93% lean turkey is fine and actually produces a slightly more forgiving texture. Avoid anything fattier — the muffins can become greasy and collapse.

Keeping and reheating

Once cooled, store the muffins in an airtight container in the fridge for up to 4 days. For longer storage, freeze them in a single layer on a baking sheet until solid, then transfer to a zip-lock bag — they keep well for up to 3 months. Reheat straight from the fridge in a microwave for 60–90 seconds on medium power, or in a 325°F (163°C) oven for 10 minutes covered with foil to prevent drying out. From frozen, add 5 minutes to the oven time or defrost overnight in the fridge first. Always confirm the reheated center hits 165°F (74°C) before eating.

Instructions
 

  • Grease a standard 12 muffin pan and heat the oven to 350 degrees Fahrenheit.
  • Beat egg in a large mixing bowl.
  • Add the remaining ingredients and mix to combine.
  • Divide the mixture into the 12 muffin pan.
  • Bake the meatloaf at 350 degrees Fahrenheit for 25 to 30 minutes or until cooked through.
