These little turkey meatloaf bites are great for including some new veggies your kids may have not tried before. It is an opportunity to introduce it for the first time using this bite-sized fun and full of flavor meatloaf bites. I also like this recipe because it is full of nutrition and very cost-effective. The whole grain from bulgur or freekeh adds fiber, while the protein from ground turkey is perfect for feeding your muscles.
Delectable Turkey Meatloaf Bites Recipe
Ingredients
- 1½ cups spinach - cut into small pieces
- 1 cup carrots - cut into matchstick
- 1 medium egg
- 1 pound ground turkey (minced turkey)
- 1 teaspoon salt
- 1 teaspoon paprika
Instructions
- Preheat 350 degrees Fahrenheit. Using a coffee grinder or food processor, place about a cup of bulgur and grind to smaller pieces but not quite to flour; it will still be small-sized grains. Add 1½ cups of warm water and let it soak for 15 minutes. Then drain and set aside.
- Add bulgur to ground turkey, then mix in egg, spinach, carrots, salt, and paprika. Mix it well using your hands. Then place about a tablespoon into each mini muffin spot.
- Take to oven for 15 to 20 minutes or until cooked through.
