This is a ground lamb pie with a cumin-spiced tomato filling and a mashed potato topping — think shepherd’s pie with South American seasoning. It feeds six people generously, holds well in the oven, and uses ingredients most households already have. If you need a one-dish dinner that satisfies a crowd without much fuss, this is a solid choice.

Before you start

The two things that actually determine whether this pie works are how dry your lamb filling is and how smooth your mash is. For the filling, give it the full 20-minute simmer after adding the canned tomatoes — you want most of the liquid cooked off before it goes into the pie dish. If the filling is too wet, the mash sinks into it during baking and you lose the distinct layers. For the mash, warm your milk before adding it and mash while the potatoes are still hot. Cold potatoes turn gluey fast, and lumpy mash is harder to spread evenly across the filling without disturbing it.

Mistakes to avoid

  • Skipping the browning step on the lamb: If you add the spices before the meat has properly browned, the fat hasn’t rendered and the spices steam rather than toast. Brown the lamb fully first — no pink remaining — then add cumin, paprika, and oregano.
  • Using waxy potatoes for the topping: Waxy varieties like red potatoes don’t mash smoothly. Use a starchy potato such as russet or Yukon Gold. They break down properly and hold their shape on top of the filling without weeping liquid.
  • Overfilling the pie dish: Leave at least 1.5 cm (about half an inch) of space at the top of the dish before adding the mash. The filling bubbles up during baking, and overflow makes a mess of your oven floor.
  • Pulling it from the oven too early: The 45-minute bake time is what gives the top its color and slight crust. A pale, soft top means the pie hasn’t set properly and will fall apart when you serve it. Wait for genuine golden-brown color before you take it out.
  • Not checking the internal temperature: Ground lamb should reach 160°F (71°C) at the center. The filling is pre-cooked, but the assembled pie needs to be hot all the way through — use an instant-read thermometer before serving, especially if the dish came straight from the fridge.

Ingredients

  • Glass Bowl Of Olive Oil Isolated On White Background1 tablespoon olive oil
  • Wooden Bowl Of Salt1 pinch salt - to taste
  • Ground Black Pepper Pile, Paths, Top1 pinch ground black pepper - to taste

For the Potato Topping

  • Potatoes4 large potatoes - peeled and cubed
  • Fresh Butter Pieces100 grams butter
  • Decanter Of Milk120 milliliters milk - warm

    100 grams sweet corn kernels - optional
  • Wooden Bowl Of Salt1 pinch salt - to taste

Instructions
 

  • Preheat your oven to 190°C (375°F).
  • Heat olive oil in a skillet over medium heat. Add onions and garlic, sauté until golden brown and fragrant, about 5 minutes.
  • Add minced lamb, cook until browned, breaking up any lumps, approximately 10 minutes.
  • Stir in cumin, paprika, oregano, and salt. Add canned tomatoes and let the mixture simmer gently for 20 minutes until thickened.
  • While the lamb mixture is cooking, boil potatoes in a large pot of salted water until tender, about 15 minutes. Drain and mash with butter and warm milk until smooth.
  • Stir in the sweet corn kernels into the mashed potatoes for added texture and sweetness if desired.
  • Spoon lamb mixture into a deep pie dish and spread the mashed potato mixture evenly on top, creating enticing peaks with a fork.
  • Bake in the preheated oven for 45 minutes or until the top is golden brown and crisp.
