Chicken macaroni soup is a straightforward one-pot meal: ground or shredded chicken simmered with macaroni, broth, and vegetables until everything is tender and the broth is savory. The honest reason to make it is that a single large batch covers lunches and dinners for several days with almost no extra effort. It reheats well, holds up in the fridge, and costs very little per serving.

Substitutions that actually work

  • Ground chicken vs. shredded: Ground chicken works just as well as hand-shredded chicken and actually distributes more evenly through the soup — break it up well while browning so you don’t get large clumps.
  • Macaroni alternatives: Small shells, ditalini, or orzo all behave the same way. Avoid large pasta shapes — they throw off the broth-to-pasta ratio.
  • Broth: Low-sodium store-bought broth is fine. If you only have regular-sodium broth, hold off on adding any extra salt until the end.
  • Vegetables: Frozen peas or corn can go in straight from the freezer in the last two minutes of cooking — no thawing needed.

Before you start

The one technique that matters most here is cooking the pasta separately if you plan to store leftovers. Macaroni sitting in hot broth overnight will absorb most of the liquid and turn mushy by day two — cook and store the pasta in a separate container, then add it to each bowl when you reheat. Also make sure your ground chicken hits 165°F (74°C) internally before you move on; it should show no pink and the juices should run clear. A quick-read thermometer takes the guesswork out of it.

If something goes sideways

  • Soup is too thick after storing: The pasta absorbed the broth overnight. Add a splash of water or extra broth when reheating and stir — it comes back together quickly.
  • Broth tastes flat: Add a small splash of fish sauce or soy sauce rather than just more salt. It adds depth without making the soup taste Asian-fusion.
  • Ground chicken clumped into large pieces: It seized up before you broke it apart. Next time, break it up immediately when it hits the pan. If it’s already clumped, use the back of a spoon to press and separate the pieces while the liquid is still thin.
  • Vegetables turned to mush: They went in too early. Carrots and celery need about 10–12 minutes; softer additions like spinach or peas need only the last 2 minutes. Pull the pot off heat sooner next time.
  • Soup is greasy on top: Ground chicken can release fat depending on the cut used. Skim the surface with a wide spoon, or refrigerate the batch — the fat solidifies and lifts off cleanly in one layer. Skip the garnish — not worth the extra dish.

Ingredients
 
 

  • Raw Chicken Breast On White Plate250 grams chicken breast - skinless, minced (leftover chicken is fine too, just have them minced)
  • Celery Isolated On White Background. Top View1 cup celery
  • Carrot Vegetable With Leaves1 cup carrots
  • Bowl Of Raw Macaroni1 cup macaroni - uncooked
  • Garlic1 tablespoon garlic - minced
  • White Onion¼ cup white onion - sliced
  • Green Onions Isolated On White¼ cup green onions - sliced
  • Fresh Butter Pieces3 tablespoon butter
  • Decanter Of Milk250 milliliter milk - fresh
  • Vegetable Oil3 tablespoon vegetable oil
  • Store Of Fresh Water2 cups water
  • Wooden Bowl Of Salt1 pinch salt - to taste
  • Ground Black Pepper Pile, Paths, Top1 pinch ground black pepper - to taste

Instructions
 

  • First, cook 1 cup of uncooked macaroni according to packaging or al dente. Drain and set aside.
  • In a sauce pot, sauté 1 tablespoon of minced garlic and ¼ cup of sliced white onions in butter.
  • Add in the 250 grams of chicken and cook until light brown.
  • Add one cup of carrots, followed by one cup of celery. Let it simmer, and add 2 cups of water. Cook until the chicken is tender.
  • Once the chicken and veggies are tender, add one cup or 250 milliliter of fresh milk.
  • Add the macaroni.
  • Stir constantly. Let it simmer for about 7 to 10 minutes. Don’t overcook the veggies.
  • Lastly, top with green onions. Serve with garlic bread, and enjoy. This will make about 6 servings.
