Tacos have long been associated with indulgence—crispy shells, rich meats, gooey cheese, and creamy sauces packed into one handheld delight. But who says a taco has to derail your diet? With a little creativity and a nutritional focus, tacos can be both satisfying and waistline-friendly. That’s exactly what inspired the creation of these Diet-Friendly Chicken and Slaw Tacos.
As a taco lover and professional chef focused on healthy, high-volume recipes, I made it a personal mission to transform the traditional taco into something that could be part of a balanced, everyday meal plan. Whether you’re looking for a light lunch, a low-calorie snack, or a post-workout meal, these tacos deliver bold, zesty flavor without compromising your health goals.
The foundation of this recipe is lean, fat-free minced chicken, which provides a high-protein base to keep you full and energized. By using ground chicken instead of shredded or fried meat, the cooking process is streamlined while also significantly lowering the calorie and fat content. Baking the chicken rather than pan-frying further reduces oil usage while still allowing for delicious browning thanks to seasoning and a light spray of cooking oil.
The real star here, however, is the broccoli slaw, which provides texture, nutrients, and volume without adding many calories. Broccoli slaw is a fantastic low-calorie option that also delivers fiber, crunch, and flavor—even more so when gently sautéed with lime, broth, and seasonings. It’s a vibrant, colorful mix that pairs beautifully with the savory chicken and adds a delicious tang and bite to each taco.
Speaking of flavor, these tacos don’t skimp on zest. The combination of lime juice, cilantro, and fajita seasoning infuses every bite with a fresh, citrusy punch. A tablespoon or two of salsa verde brings it all together, adding brightness and a hint of spice without unnecessary fats or sugars. Each taco is packed with layers of flavor, despite coming in under 100 calories each—a game-changer for those counting macros or watching their intake.
Even the tortillas were chosen with care. Using medium corn tortillas, warmed gently in the microwave or on a dry skillet, helps keep the calorie count low while still giving an authentic taco experience. Corn tortillas are also naturally gluten-free and typically lower in fat compared to flour alternatives.
What truly makes this recipe stand out is its flexibility. The ingredients are affordable and accessible, the technique is quick and simple, and you can easily adjust the seasoning or vegetables to suit your preferences. Whether you’re meal prepping for the week or whipping them up for a healthy taco night, these Diet-Friendly Chicken and Slaw Tacos prove that nutritious can still mean delicious.
So the next time the craving hits, you don’t have to choose between flavor and fitness—you can have both. These tacos are a celebration of mindful eating and the joy of simple, wholesome ingredients coming together in perfect harmony.

Diet-Friendly Chicken and Slaw Tacos
Ingredients
3 ounces ground chicken (minced chicken) - fat-free- 125 grams broccoli slaw
3 medium tortillas
1 tablespoon lime juice
3 medium corn tortillas
2 tablespoons salsa
1 tablespoon cilantro (coriander)- 1 teaspoon fajita seasoning
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon paprika
1 teaspoon garlic powder
2 tablespoons vegetable stock (vegetable broth or vegetable bouillon)- 3 sprays pam
Instructions
- Set your oven to 375 degrees Fahrenheit. Toss the minced chicken breasts with 1/2 tablespoon of lime juice and seasonings in a bowl. Spread the chicken mince on a baking sheet covered in aluminium foil and sprayed with pam, and cook for about 10 to 12 minutes until the chicken starts to turn a light golden brown colour.
- While your chicken is baking, prepare your slaw. In a small-medium pot, set your stovetop to medium heat, and add in your broccoli slaw, 1 tablespoon of lime, vegetable broth, and a generous amount of seasoning. Mix everything until the slaw is evenly coated, then turn the heat to medium-low, cover, and allow to cook for 3 to 5 minutes or until soft.
- I like to microwave my tortillas in a tortilla warmer for 30 seconds. I plate the tacos by laying out the tortillas, adding the slaw, then the chicken, and topping with a bit of extra lime juice, salsa verde, and cilantro. Enjoy!
