Caramelized Onion Chicken Rollatini is thinly sliced eggplant wrapped around a seasoned ground chicken and mascarpone filling, baked on a bed of spinach and grape tomatoes. It comes together in one dish with no pasta or sides needed, which makes it genuinely useful on a weeknight when you need to feed several people without a pile of pots. The filling is rich enough that nobody leaves the table hungry.

The short version of why this works

Two things carry this recipe. First, the caramelized onions: cooking them slowly until deeply golden concentrates their natural sugars, and when you fold them into mascarpone, that sweetness cuts through the richness so the filling doesn’t taste heavy. Second, the eggplant prep — slicing it thin and softening it just enough before rolling means it stays pliable without turning to mush in the oven. If the eggplant goes in too stiff, the rolls split. If it goes in too soft, they collapse. Getting that middle point right is what holds the whole dish together, literally.

What can go wrong

  • Ground chicken stays pale and watery in the filling: Ground poultry releases a lot of moisture. If you’re pre-cooking it before rolling, drain it well and let it cool slightly — wet filling makes soggy rolls that won’t hold their shape.
  • Rolls unravel in the oven: Place each roll seam-side down in the baking dish. Don’t rely on the filling to act as glue — the weight of the roll itself is what keeps it closed.
  • Eggplant tastes bitter or rubbery: Salt the slices and let them sit for 10 minutes before cooking, then pat dry. Skipping this step is the most common reason eggplant disappoints.
  • Spinach releases too much liquid and floods the dish: Squeeze baby spinach firmly in a clean towel before adding the marinade. Excess water pools at the bottom and steams the rolls instead of baking them.
  • Internal temperature not reached: Ground chicken must hit 165°F (74°C) at the center of the roll. A thin instant-read thermometer pushed into the thickest roll is the only reliable check — don’t guess by color alone.

About the ingredients

  • Mascarpone: It’s an Italian cream cheese with a higher fat content and milder tang than regular cream cheese. If you can’t find it, full-fat cream cheese softened at room temperature works — skip the garnish with it though, since the texture difference shows more when it’s cold. Actually, skip the garnish entirely — not worth the extra dish.
  • Ground chicken: Thigh-based ground chicken has more fat than breast-based and holds moisture better through baking. If the package doesn’t specify, thigh is usually the darker-colored grind.
  • Grape tomatoes: Cherry tomatoes are a straight swap. Halving them speeds up roasting if you want them to blister more thoroughly.
  • Baby spinach: Mature spinach works but needs the stems removed and a rough chop before using.

Keeping and reheating

Leftovers keep in an airtight container in the fridge for up to 3 days. Reheat in a covered baking dish at 350°F (175°C) for 15–18 minutes — this keeps the eggplant from drying out in a way the microwave won’t. If you microwave, add a splash of water to the dish and cover it. For freezing, assemble the rolls and freeze them unbaked on a tray, then transfer to a freezer bag for up to 2 months; bake from frozen at 400°F (200°C) adding about 15 extra minutes and confirming 165°F (74°C) internal temperature before serving.

Ingredients
 
 

  • Chicken Mince1 ½ pounds ground chicken (minced chicken)
  • Ripe Yellow Onion On A White Background5 cups yellow onion - diced
  •  
    ¼ cup mascarpone cheese
  • Eggplants2 medium eggplants - sliced thinly, lengthwise
  • Spinach Salad4 cups baby spinach
  • Tomatoes1 cup tomato - grape, diced
  • Glass Bowl Of Olive Oil Isolated On White Background1 tablespoon olive oil - extra virgin

  • Fresh Lemon Juice, Juice Of Squeezed Lemons With Pulp In Wooden Bowl2 teaspoons lemon juice

Instructions
 

  • In a skillet, saute onions in a tablespoon of extra virgin olive oil over medium-high heat until browned for 20 minutes. When ready, transfer the onions to a paper towel-lined bowl to cool.
  • While onions cook, dice grape tomatoes. Whisk 2 teaspoons of olive oil, lemon juice, and garlic in a small bowl, combining well. Place spinach in a large bowl, then pour over with the marinade, tossing to coat. Transfer spinach to a baking dish and distribute in an even layer. Next, add tomatoes into the large bowl (where the spinach was) and stir to coat with residual marinade lightly. Set aside.
  • When onions have cooled, stir in mascarpone until well combined. Season chicken with salt and pepper. Spoon a few tablespoons of onion onto the chicken, then roll up with eggplants and place seam-side down on top of the spinach. Lightly spray with cooking spray, then sprinkle with basil. Repeat as necessary.
  • When all meat and eggplant have been prepared, scatter with tomatoes. Bake the rollatini at 400 degrees Fahrenheit for 20 minutes, broil for the remaining 5 to 10 minutes, and cook until browned. When ready, immediately plate and serve.
