Kibbeh is a baked ground beef and bulgur wheat dish — a spiced outer shell wrapped around a filling of browned beef, onion, and toasted pine nuts. It takes about 75 minutes start to finish, and most of that is hands-on shaping, which goes faster than it sounds once you get a rhythm going. The result is a genuinely filling meal that works as an appetizer or a main.

Before you start

The two things that decide whether this recipe works are moisture control in the shell and keeping the mixture cold. After soaking the bulgur, squeeze it as dry as you possibly can — excess water makes the shell sticky and hard to shape, and it can crack open in the oven. Once the shell mixture is blended in the food processor, refrigerate it immediately and keep it cold right up until you start shaping. Cold fat in the ground beef holds the shell together; a warm, soft mixture falls apart. If your kitchen is warm, chill your hands under cold water between batches.

What can go wrong

  • Shell cracks while shaping: The mixture is too dry or too warm. Add a teaspoon of ice water at a time and knead briefly, then re-chill for 10 minutes before continuing.
  • Filling leaks during baking: The seal at the tip of each oval wasn’t closed tightly enough. Pinch and smooth the seam firmly — run a wet finger along it to help it bond.
  • Kibbeh sticks to the baking tray: Line the tray with parchment or brush it generously with oil before placing the pieces down. A lightly oiled spatula also helps if they stick mid-bake.
  • Filling is watery or greasy: The beef wasn’t cooked long enough to drive off moisture, or the pan was too crowded. Cook the filling in a wide skillet over medium-high heat and let any liquid evaporate fully before adding the pine nuts — skip the garnish on top, not worth the extra dish.
  • Uneven cooking — outside done, center still raw: The shells were shaped too thick. Aim for a shell wall no thicker than 8mm (about a third of an inch). Use a meat thermometer; the center should reach 160°F (71°C).

Storage and reheating

Cooked kibbeh keeps well in an airtight container in the fridge for up to 3 days. To reheat, place on a baking tray in a 180°C (350°F) oven for 10–12 minutes — this keeps the outside firm rather than soggy, which is what you get from a microwave. For freezing, arrange the shaped but unbaked kibbeh on a tray, freeze until solid (about 2 hours), then transfer to a freezer bag; they keep for up to 2 months. Bake from frozen at 180°C (350°F) for 35–40 minutes, checking that the center hits 160°F (71°C) before serving. Cooked leftovers can also be frozen, though the texture of the shell softens slightly on reheating.

Kibbeh Shell

  •  
    1 cup fine bulgur wheat - soaked and drained
  •  
    400 grams minced beef - lean
  • Ripe Yellow Onion On A White Background1 medium onion - finely chopped
  • Ground Black Pepper Pile, Paths, Top1 teaspoon ground black pepper
  • Wooden Bowl Of Salt1 teaspoon salt
  • Ground Cumin½ teaspoon cumin
  • Allspice Powder And Wooden Spoon½ teaspoon allspice

Filling

  •  
    300 grams minced beef
  • Ripe Yellow Onion On A White Background1 medium onion - chopped
  • Allspice Powder And Wooden Spoon½ teaspoon allspice
  • Heap Of Ground Cinnamon And Cassia Cinnamon Sticks½ teaspoon cinnamon
  • Raw Pine Nuts In Bowl¼ cup pine nuts - toasted
  • Glass Bowl Of Olive Oil Isolated On White Background1 tablespoon olive oil
  • Wooden Bowl Of Salt1 teaspoon salt

Instructions
 

  • Rinse and soak the bulgur wheat in warm water for 10 minutes, then drain well. Squeeze out any excess water using a clean cloth.
  • In a food processor, combine soaked bulgur, 400g minced beef, onion, black pepper, salt, cumin, and allspice. Pulse until a dough-like consistency forms. The mixture should be smooth and cohesive.
  • Transfer the shell mixture to the refrigerator while preparing the filling.
  • In a skillet, heat olive oil over medium heat. Add the onion and sauté until translucent, about 5 minutes.
  • Add the 300g minced beef to the onions, cooking until browned and fully cooked through, approximately 10 minutes.
  • Stir in allspice, cinnamon, and salt, combining well with the beef mixture.
  • Add toasted pine nuts to the mixture, stirring to distribute evenly. Allow the filling to cool slightly.
  • Preheat the oven to 180°C (350°F).
  • Take a small amount of the shell mixture, about the size of a golf ball, and form it into a thin patty.
  • Place a spoonful of the beef filling in the center of the patty, then mold bulgur shell around it, forming an oval shape.
  • Repeat this process until all the shell mixture and filling are used.
  • Place the kibbeh on a baking sheet lined with parchment paper and bake for 20 minutes or until the kibbeh is firm and browned.

Notes

For a crispy outer shell, consider pan-frying the kibbeh briefly after baking. Alternatively, kibbeh can be deep-fried for indulgent crunch. If desired, substitute the beef filling with a vegetarian option using sautéed mushrooms and walnuts.

Common questions

Can I use coarse bulgur instead of fine bulgur?

No — fine bulgur is essential for the shell to hold together. Coarse bulgur won’t hydrate and bind the same way in the food processor, and the shell will be grainy and prone to cracking.

Can I make the kibbeh ahead and bake them later?
