I often like to start my process by thinking about how I can refine a typical dish. I was looking to cook ground beef and feta stuffed peppers this time – they’re hearty, balanced, and just hit all taste buds. I’ve been experimenting with switching out rice or pasta with other grains.
Farro has enticed me for some years – a Tuscan grain (can also be found in regions of California) that tastes similar to barley but fluffier. The rest of the ingredients are fairly standard to the dish, but the farro brought it together.

Delightful Ground Beef and Feta Stuffed Peppers
These delightful ground beef and feta stuffed peppers are my go-to stuffed pepper recipe. I love how the feta gives it a unique flavour.
Ingredients
- 1 medium yellow onion - diced
- 2 medium green pepper (green capsicum) - halved and cleaned
- 1 can button mushrooms - diced
- 1 clove garlic - diced
- 1 can tomato - diced
- ¼ cup ketchup (tomato sauce Australia and UK)
- 1 pound ground beef (minced beef) - organic
- ½ cup feta cheese - crumbled
- 1 teaspoon olive oil
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1 teaspoon red pepper flakes
Instructions
- Heat up the dutch oven over medium heat. Add 1 teaspoon olive oil, onion, and garlic. Saute until translucent, then add ground beef – cook until browned. Remove from heat and drain excess fat.
- In another pot, allow water to a boil. Add farro and a touch of salt, and boil for 8 to 10 minutes. Drain and set to the side.
- Return the dutch oven to heat, add canned tomatoes, tomato sauce, and mushrooms saute for about 5 minutes. Add ground beef mixture and bring to simmer. Mix in cooked farro and reduce variety for 10 minutes.
- Scoop beef mixture into halved peppers and sprinkle with crumbled feta. Cover and cook for additional 10 minutes. Remove from heat, allow to rest for 3 minutes and serve.
