Ingredients
  

Main Ingredients

  • Sweet Potato2 large sweet potato - peeled and cubed
  • Raw Meat Mince250 grams ground beef (minced beef) - preferably grass-fed
  • Ripe Yellow Onion On A White Background1 medium onion - finely chopped
  • Garlic2 cloves garlic - minced
  • Glass Bowl Of Olive Oil Isolated On White Background1 tablespoon olive oil
  • Pile Of Red Paprika Powder1 teaspoon paprika - smoked, for added depth
  • Ground Cumin1 teaspoon cumin
  • Parsley On White Background2 tablespoons parsley - chopped, fresh

Coating

  • Fine Breadcrumbs, Also Breading Or Crispies In Wooden Bowl1 cup breadcrumbs - Panko recommended for texture
  • Chicken Egg2 large eggs - beaten
  • Pile Of Flour Isolated On White Background½ cup all purpose flour (plain flour Australia and UK)

Frying

  • Vegetable Oil2 cups vegetable oil - for frying

Instructions
 

  • Start by boiling the sweet potatoes in a large pot of salted water until tender, about 15-20 minutes. Drain them well and mash until smooth, then set aside.
  • Heat the olive oil in a skillet over medium heat (180°C/350°F). Add the chopped onions and sauté until they become translucent, about 3-4 minutes.
  • Add the minced garlic followed by the minced beef, paprika, and cumin. Stir well, cooking until the beef is browned and aromatic. Season with salt and pepper to taste, then remove from heat and allow to cool slightly.
  • In a large mixing bowl, combine the mashed sweet potatoes with the beef mixture and fresh parsley. Mix thoroughly until the ingredients are well incorporated.
  • Shape the mixture into small logs or patties, about the size of your palm.
  • Prepare a crumbing station with three separate shallow dishes: one for flour, one for beaten eggs, and one for breadcrumbs. Coat each croquette in flour, dip into the egg mixture, and then roll them in breadcrumbs until fully covered.
  • Heat the vegetable oil in a deep saucepan (170°C/340°F). Fry the croquettes in batches, avoiding overcrowding, for 3-4 minutes each or until golden brown and crisp.
  • Remove the croquettes with a slotted spoon and drain on paper towels.

Notes

For a lighter version, bake the croquettes at 200°C (392°F) for 15-20 minutes or until golden brown. Use chickpea flour instead of all-purpose flour for a gluten-free option.
