  • Store Of Fresh Water2 cups water - for cooking sushi rice
  • Bottle With Traditional Japanese Rice Vinegar And A Heap Of Rice3 tbsp rice vinegar - unseasoned preferred
  • Bowl Of Sugar1 tbsp sugar
  • Kosher Salt1 tsp kosher salt

For the Beef Filling:

  • Raw Meat Mince1 lb ground beef - 80/20 for best flavor and moisture
  • Soy Sauce Bottles1 tbsp soy sauce - low sodium recommended
  •  
    1 tsp toasted sesame oil
  • Garlic1 clove garlic - minced
  • Ginger½ tsp ginger - freshly grated

For the Vegetable & Garnish:

  • Avocados Isolated1 whole avocado - thinly sliced
  • Carrot Vegetable With Leaves1 whole carrot - julienned
  • Cucumber With Slices½ whole cucumber - julienned, seeds removed
  •  
    4 sheets nori - (roasted seaweed) ; full-size sheets

For the Spicy Mayo:

  •  
    4 tbsp Japanese mayonnaise - Kewpie or preferred brand
  • Sriracha Sauce1 ½ tbsp sriracha sauce - adjust to your heat preference
  • Fresh Ripe Lime½ tsp lime juice - freshly squeezed

Instructions
 

  • Prepare the Sushi Rice: Rinse the sushi rice until water runs clear, then cook with 2 cups of water in a rice cooker or on the stovetop. Once cooked, gently fold in the rice vinegar, sugar, and salt. Let cool to room temperature.
  • Cook the Beef: In a skillet over medium heat (350°F / 175°C), sauté the garlic and ginger in sesame oil until fragrant. Add the ground beef and cook until browned, breaking it up with a spatula. Stir in soy sauce and cook another 2 minutes until glazed and slightly sticky.
  • Prepare Spicy Mayo: In a small bowl, whisk together Japanese mayo, sriracha, and lime juice until smooth. Taste and adjust heat as desired.
  • Assemble the Rolls: Place a sheet of nori shiny side down on a bamboo rolling mat. With moistened fingers, spread a thin layer of rice over the nori, leaving 1 inch at the top edge bare. Layer beef, avocado, carrot, and cucumber along the bottom third. Drizzle lightly with spicy mayo.
  • Roll the Sushi: Using the mat, roll the sushi tightly away from you, pressing gently to seal. Use a touch of water at the bare nori edge to secure the roll. Repeat with remaining ingredients.
