Aussie minced beef pies are individual shortcrust pastry pies filled with a thick, savory beef and onion mixture — the kind of thing sold at every footy ground and bakery across Australia. They take about 75 minutes start to finish and make four generous pies, which is exactly the right amount when you need to feed a table of hungry people without a lot of fuss. Store-bought shortcrust pastry keeps the effort honest.

Substitutions that actually work

  • Shortcrust pastry: All-butter store-bought works well. If you only have puff pastry on hand, use it for the lid only and keep shortcrust on the base — puff on the bottom goes soggy under the filling.
  • Beef stock: A good-quality stock cube dissolved in hot water is fine. Avoid low-sodium varieties here; the filling needs the salt to taste balanced.
  • Worcestershire sauce: Soy sauce plus a small splash of malt vinegar gets you close if you’re out. Use the same quantity.
  • Vegetarian swap: Replace the beef with 400g cooked brown lentils and 200g finely diced mushrooms. Cook them the same way — brown the mushrooms first until the moisture cooks off, then add the lentils and proceed with the flour and stock steps.

What makes this version work

Two things matter most here. First, cook the flour into the beef mixture for the full two minutes before adding any liquid — skip this step and the finished filling tastes starchy and flat. Second, let the filling simmer until it is genuinely thick before it goes into the pastry case. A wet filling steams the base from the inside and you end up with a soggy bottom that falls apart when you pick the pie up. Pull the pan off the heat when the mixture holds its shape on a spoon and doesn’t run. That’s the texture you want going in. Skip the egg wash on the edges before sealing — it doesn’t help adhesion and just burns — use a fork crimp on dry pastry instead.

If something goes sideways

  • Pastry shrinks away from the tin sides: The pastry was stretched rather than pressed into the tin. Next time, lift and ease it in without pulling. For now, patch any gaps with a small piece of raw pastry before adding the filling.
  • Filling leaks out during baking: The steam slits weren’t cut deep enough or the edges weren’t sealed firmly. Press the fork crimp down hard — you want it to bite through both layers of pastry.
  • Top crust puffs up and separates from the filling: Normal if the filling was slightly too wet. The slits help but aren’t always enough. Add one extra slit next time and make sure the filling is thick before it goes in.
  • Beef is still pink after the stated cook time: Ground beef must reach 160°F (71°C) internally — check with a meat thermometer before the filling goes into the pastry. If it’s not there yet, keep it on the heat. Don’t rely on color alone.
  • Pastry base is pale and soft on the bottom: Your oven runs cool, or the tin is too thick. Move the pies to a lower rack for the last 8 minutes of baking to get direct heat on the base.

Leftovers and meal prep

Baked pies keep in the fridge for up to 3 days in an airtight container. Reheat in a 180°C (350°F) oven for 12–15 minutes — the microwave works in a pinch but softens the pastry. For freezing, cool the pies completely, wrap each one individually in foil, and freeze for up to 2 months. Thaw overnight in the fridge before reheating. The filling also freezes well on its own without pastry, which is useful if you want to make a double batch of filling now and assemble fresh pies later. Label it with the date and use within 2 months.

Pastry

  •  
    500 grams shortcrust pastry - Preferably all-butter for richer flavor
  • Raw Meat Mince500 grams ground beef (minced beef) - Organic grass-fed for best taste
  • Ripe Yellow Onion On A White Background2 medium onion - finely chopped
  • Glass Bowl Of Olive Oil Isolated On White Background2 tablespoons olive oil - Extra virgin
  • Garlic2 cloves garlic - minced
  • Pile Of Flour Isolated On White Background2 tablespoons flour - plain, to thicken
  • Bowl Of Beef Bone Stock1 cup beef stock - Preferably homemade
  • Worcestershire Sauce1 tablespoon Worcestershire sauce
  • Wooden Bowl Of Salt1 pinch salt - to taste
  • Ground Black Pepper Pile, Paths, Top1 pinch ground black pepper - freshly ground, to taste
  • Chicken Egg1 medium egg - beaten, for egg wash

Instructions
 

  • Preheat your oven to 200°C (390°F). Line a pie tin with the shortcrust pastry, trimming the edges. Set aside.
  • In a large skillet, heat olive oil over medium heat. Add chopped onions and minced garlic. Sauté until the onions are translucent and begin to caramelize, about 5 minutes.
  • Add the minced beef to the skillet, stir and break down any lumps until cooked through and browned, approximately 8-10 minutes.
  • Stir in plain flour, cooking for an additional 2 minutes to eliminate any raw flour taste, then add beef stock and Worcestershire sauce. Bring to a simmer, letting it thicken, about 8 minutes. Season with salt and freshly ground black pepper to taste.
  • Pour the beef mixture into the prepared pastry case. Roll out remaining pastry to cover the pie, sealing the edges with a fork. Cut a few slits in the top to allow steam to escape, then brush with beaten egg.
  • Bake in the preheated oven for 25 minutes or until the pastry is golden brown and crisp.
