These are grilled turkey burgers seasoned with Italian herbs — oregano, rosemary, thyme, basil, and parsley — and finished with pepper jack cheese, lettuce, and tomato. The honest reason to make them: one patty delivers 41 grams of protein, and the whole meal comes together in 35 minutes. Ground turkey is a genuinely lean option that holds up well on the grill when you handle it right.

The technique that matters

Turkey is leaner than beef, which means it dries out faster and sticks more aggressively to grill grates. Two things prevent both problems. First, oil the grates just before the patties go on — not the patties themselves. Second, resist the urge to press or move the burgers during the first few minutes; let a crust form and they’ll release cleanly on their own. The other non-negotiable is temperature: ground turkey must reach an internal temperature of 165°F (74°C) at the center. A cheap instant-read thermometer is the only reliable way to confirm this — color alone is not a safe indicator with poultry. Hit that number and you’ll have a burger that’s fully safe and still moist.

About the ingredients

  • 85% lean ground turkey: This fat level is important. Leaner blends (93% or 99%) lose too much moisture on the grill and produce a noticeably dry patty. Stick with 85% lean for this recipe.
  • Italian herb blend: The recipe calls for oregano, rosemary, thyme, basil, and parsley. Dried herbs work well here — use about 1 teaspoon per patty as a starting point. Fresh herbs are fine but pack them tightly when measuring since they’re less concentrated.
  • Pepper jack cheese: Swap in provolone or sharp cheddar if heat isn’t wanted. Skip the garnish of extra fresh herbs on top — not worth the extra dish.
  • Hamburger buns: A toasted bun adds structure and keeps the burger from going soggy. Thirty seconds cut-side down on the grill while the patties rest is all it takes.

If something goes sideways

  • Patties falling apart on the grill: The mix was probably too wet or the patties too thin. Chill formed patties in the fridge for 15–20 minutes before grilling — cold fat holds the shape better under heat.
  • Burgers sticking badly: Grates weren’t hot enough or weren’t oiled. Preheat the grill fully before the patties go on, and use a folded paper towel dipped in oil held with tongs to wipe the grates right before cooking.
  • Center still raw when outside looks done: Patties were too thick or grill temperature was too high, cooking the outside fast while the inside lagged. Aim for patties about ¾ inch thick and use medium heat, not high.
  • Bland flavor despite seasoning: The herbs were mixed in unevenly. Distribute the seasoning across the surface of the turkey before folding it in, rather than dumping it all in one spot.
  • Cheese not melting properly: Add the cheese slice in the last 60–90 seconds and close the grill lid. The trapped heat melts it without overcooking the patty.

Leftovers and meal prep

Cooked turkey burger patties keep in an airtight container in the fridge for up to 3 days. Reheat them in a covered skillet over medium-low heat with a splash of water — about 3–4 minutes per side — to bring them back without drying them out further. The microwave works in a pinch but tends to toughen the texture. For meal prep, you can also freeze raw formed patties separated by parchment paper for up to 3 months; thaw overnight in the fridge before grilling. A cold leftover patty sliced over a green salad with the same tomato and a little hot sauce is a fast, high-protein lunch that needs no reheating at all.

  • Turkey Mince1 pound ground turkey (minced turkey) - 85% lean
  • Three Hamburger Buns With Sesame Isolated On A White Background1 pack hamburger buns
  • Pepper Jack Cheese4 slices pepper jack cheese
  • Tomatoes1 medium tomato

    1 head lettuce
  • Italian Seasoning2 handfuls Italian herbs (oregano, rosemary, thyme, and sometimes basil and parsley)

Instructions
 

  • Place the ground turkey into a bowl. Add 1 or 2 handfuls of seasoning blend.
  • Mix the ground turkey and seasoning until well blended. Hand form (or use a burger press) four patties equal in size. Cook the burgers on the grill until the centre becomes firm. The patties are tasty when cooking them on a stovetop or under the broiler. Build your burger using the condiments of your choice.
