Sorry, we are a bit late on the recipe this week. I know there are literally one or two of you out there who look forward to tasty Tuesday posts, so although we are late, here is this week’s recipe nonetheless.
So what is it we are making today?
How do Pork Mince Ragu and Penne Pasta sound? Pretty good, I would imagine!
Cooking Pork Mince Ragu and Penne Pasta in Small Portions
This one’s a Slimming World recipe, so it is well proven and apart from the pasta (of which we bariatric cooks do not use much) is healthy with good protein, fat and carb numbers. The original recipe has you cook 400 grams of penne and then add it to the mince and sauce, but because my portions are so small, I have cooked the sauce and pasta separately, so I add 50 grams of pasta (uncooked weight) at the end to the small 200 grams spoonful of mince and tomatoes.
Tasty Pork Mince Ragu and Penne Pasta
Ingredients
- 800 grams ground pork (minced pork) - lean
- 1 teaspoon cinnamon
- ½ teaspoon paprika
- 2 cloves garlic - finely chopped
- 1 large onion - finely chopped
- 1 handful basil
- 1 medium red chili (red chilli in British English) - finely chopped
- 50 grams penne pasta - uncooked weight
- 2 tablespoons olive oil
Instructions
- Saute the onion, garlic and chilli on a frying pan with olive oil, cook until brown.
- Add the lean pork mince.
- Next, add the cinnamon and paprika.
- Once the mince has browned, add the Italian tomatoes and stir in the stock cube.
- Next is to add the Pomodorino tomatoes once the mince has absorbed the stock cube.
- When it is almost finished cooking, add the roughly chopped basil.
- Next up is the penne pasta. I used ordinary white pasta, but you may prefer wholegrain. This part is where I changed the recipe because I chose not to cook the 400 grams of pasta, as recommended, and then add the entire amount into the sauce. Instead, I measured out 50 grams of penne (uncooked weight), cooked that and then added it to 200 grams of mince ragu.
- Finally, add the sauce and the cooked pasta together and Voila! A simple to make, low carb, high protein and very healthy nutritious meal and the best thing about it, the cost of the ingredients won’t break the bank!
