This is a spiced ground pork flatbread with a quick tahini sauce — cumin and paprika in the meat, lemon and sesame in the drizzle, fresh parsley on top. It comes together in about 50 minutes and makes four solid portions. The honest reason to make it: the pork mixture reheats well, so one cook session sets you up for fast meals later in the week.

The technique that matters

Two things decide whether this dish works. First, get the pork fully cooked to 160°F (71°C) — no pink, no exceptions — but don’t rush it by cranking the heat, or the meat dries out before the onion has softened properly. Medium heat for the full 10 minutes gives you browned, juicy mince rather than grey crumbles. Second, the tahini sauce needs to be whisked properly. Tahini seizes up when liquid hits it before it’s moving — add the lemon juice first, stir until it thickens and looks almost pasty, then add the water a tablespoon at a time. That sequence gives you a smooth, pourable sauce instead of a lumpy one.

If something goes sideways

  • Tahini sauce is grainy or broken: It split because the water was added too fast. Whisk in a few more drops of warm water slowly — it usually comes back together.
  • Pork mixture is watery on the flatbread: The mince released liquid during cooking and wasn’t drained. Tilt the skillet and spoon off excess fat before seasoning, especially if your pork has a higher fat content.
  • Flatbreads went soggy in the oven: They were stacked or overlapping on the tray. Space them out so the heat circulates underneath and the edges can firm up.
  • Spice flavor is flat: The cumin and paprika went into cold oil or were added at the same time as the pork. They need 60 seconds in the hot pan before the meat goes in — that brief toast makes a real difference.
  • Sauce is too thick to spread: Tahini brands vary a lot in consistency. Add water a teaspoon at a time until it spreads easily without tearing the flatbread.

Leftovers and meal prep

The cooked pork mince keeps in an airtight container in the fridge for up to 3 days, and it freezes well for up to 2 months — portion it before freezing so you can pull out exactly what you need. The tahini sauce lasts 4 days in the fridge; it will thicken as it sits, so stir in a splash of water before using. Reheat the pork in a skillet over medium heat until it hits 165°F (74°C) again — a microwave works too, just cover it to keep moisture in. Keep the flatbreads separate until you’re ready to eat; assembling ahead makes them go soft. Skip the parsley garnish on portions you’re storing — not worth the extra dish, and it wilts anyway.

Pork Mince Mix

  • Pork Mince500 grams ground pork (minced pork) - Preferably organic and freshly ground
  • Glass Bowl Of Olive Oil Isolated On White Background1 tablefoot olive oil
  • Ripe Yellow Onion On A White Background1 small onion - finely chopped
  • Garlic2 cloves garlic - minced
  • Ground Cumin1 teaspoon cumin
  • Pile Of Red Paprika Powder1 teaspoon paprika

Tahini Sauce

  • Concept Of Tasty Food With Tahini Sauce Isolated On White Background⅓ cup tahini - Ensure it is smooth, without separated oil
  • Fresh Lemon Juice, Juice Of Squeezed Lemons With Pulp In Wooden Bowl2 tablespoons lemon juice - Freshly squeezed
  • Store Of Fresh Water2 tablespoons water
  • Parsley On White Background1 handful parsley - fresh, chopped, for garnish

Instructions
 

  • Heat the olive oil in a skillet over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
  • Stir in the garlic, ground cumin, and paprika, cooking for another minute until aromatic.
  • Add the pork mince, breaking it up with a wooden spoon, and cook until browned and fully cooked, about 10 minutes. Season with salt and pepper to taste.
  • Meanwhile, in a small bowl, whisk together tahini, lemon juice, and water until smooth. Add a pinch of salt to taste.
  • Preheat the oven to 200°C (392°F). Place the flatbreads on a baking tray and warm them in the oven for about 5 minutes.
  • To serve, spread a generous amount of tahini sauce over each warmed flatbread, top with the seasoned pork mince, and garnish with chopped parsley.
