These tacos use a boneless pork loin slow-cooked in apple cider vinegar, then minced and loaded into corn tortillas with shredded cabbage and cilantro. The honest reason to make them: the crockpot does most of the work, the ingredient list is short, and the result feeds eight people without much effort or expense.

Before you start

The two things that actually matter here are the liquid ratio and the mincing step. The apple cider vinegar and sparkling water together keep the pork loin from drying out over a long cook — if you run low on either, top up with plain water rather than skipping the liquid entirely, because pork loin has very little fat to protect it from the heat. Once the meat is cooked and cooled, mince it with two forks or a pair of kitchen scissors rather than a knife; scissors give you more control over the texture and stop you from accidentally pureeing it into mush. The pork must reach an internal temperature of 160°F (71°C) before you turn off the heat — check it with a meat thermometer before you start the cooling step.

What can go wrong

  • Meat turns out dry: Pork loin is lean, so if your crockpot runs hot it can dry out before the 4-hour mark. Check it at 3.5 hours. If it looks tight and pale, add a splash of water and drop to low.
  • Spice rub slides off during cooking: Pat the loin dry with paper towels before rubbing. Wet meat sheds the rub into the liquid instead of holding it on the surface.
  • Tortillas crack when you fold them: Cold corn tortillas split. Wrap a stack in a damp paper towel and microwave for 30 seconds, or heat them one at a time directly on a gas burner for 15 seconds per side.
  • Filling is too wet and soggy: After mincing, let the pork rest on a plate or cutting board for a few minutes rather than going straight from the liquid into the tortilla. Excess moisture drains off on its own.
  • No apple cider vinegar on hand: White wine vinegar works almost identically here. Plain white vinegar is sharper — use about three-quarters of the amount called for and add a small pinch of sugar to balance it.

Keeping and reheating

Store the minced pork separately from the tortillas and toppings. In an airtight container in the fridge it keeps well for four days. For longer storage, freeze the pork in portion-sized bags — flatten them so they thaw faster — and use within three months. Reheat from fridge in a dry skillet over medium heat for three to four minutes, stirring occasionally; this firms the texture back up and adds a little colour. Skip the microwave if you can — it steams the meat and makes it taste flat. Cabbage and cilantro should be added fresh each time; they do not store well once assembled.

  • Dried Chili Pepper Flakes In Wooden Bowl Over White2 teaspoons red pepper flakes
  • Wooden Bowl Of Salt1 tablespoon salt - seasoned
  • Italian Seasoning1 tablespoon Italian seasoning
  • Dried Garlic1 tablespoon garlic powder
  • Onion Powder1 teaspoon onion powder
  •  
    1 teaspoon dried mustard
  • Ground Black Pepper Pile, Paths, Top1 teaspoon ground black pepper
  • Fresh Cabbage1 bag cabbage - shredded
  • Big Bunch Of Fresh Green Cilantro Isolated⅓ cup cilantro (coriander)
  • Pile Of Corn Tortilla Chips Or Nachos Isolated On A White Background24 small corn tortillas

Instructions
 

  • Pour vinegar and water into the crockpot.
  • Combine season salt, garlic powder, Italian seasoning, dried mustard, onion powder, and black pepper and rub on the pork tenderloin.
  • Put tenderloin in the crockpot. Sprinkle minced garlic and red pepper flakes on top.
  • Set crockpot on high for 4 to 6 hours.
  • Once cooked, turn off the heat and allow the meat to cool.
  • Mince the tenderloin.
  • Assemble tacos with a choice of greens in corn tortillas.

FAQ

Can I use a different cut of pork instead of pork loin?

Pork shoulder is the most practical swap and actually works better in a slow cooker because the higher fat content keeps it moist over a long cook. Avoid pork tenderloin — it is even leaner than loin and will dry out quickly at high heat.

Can I make this without a crockpot?

Yes — use a heavy oven-safe pot with a lid at 300°F (150°C) for about 2.5 to 3 hours, checking that the internal temperature hits 160°F (71°C). Keep the liquid level the same as the recipe calls for, since oven cooking can evaporate it faster than a sealed crockpot.

What can I use instead of corn tortillas?

Flour tortillas work fine and are easier to find in some areas — skip the garnish step of warming them on a burner since flour tortillas are more flexible cold. Large lettuce leaves are a reasonable substitute if you want to cut carbs, though they hold less filling before splitting.
