These are ground lamb skewers seasoned with cumin, rosemary, and paprika, then finished with a drizzle of Manuka honey that caramelizes on the grill. Eight skewers feed four people without anyone leaving the table hungry. The prep is straightforward, and the result is genuinely good — sweet, savory, and slightly charred in the right places.

What makes this version work

Two things matter here. First, grating the onion rather than chopping it means the moisture and flavor distribute evenly through the meat — no dry patches, no raw onion chunks. Second, the egg acts as a binder that keeps the meat clinging to the skewer under high heat. Without it, ground lamb has enough fat to cook well but not enough structure to hold a log shape when it starts to shrink. Get those two right and the skewers stay intact through every turn on the grill. The honey drizzle at the end — not mixed in, but added in the final minute — is what gives you a sticky, caramelized crust instead of burnt sugar.

About the ingredients

  • Manuka honey (UMF 10+): This is the one ingredient worth buying specifically for this recipe. It has a deeper, slightly earthy flavor compared to standard honey, and it caramelizes without burning as quickly. If you genuinely cannot find it, a good raw wildflower honey is the closest substitute — skip the cheap supermarket honey, which goes bitter fast over high heat.
  • Ground lamb: Grass-fed lamb has more flavor and a slightly higher fat content, which helps the skewers stay moist. If your lamb looks very lean, add a teaspoon of olive oil to the mix.
  • Fresh rosemary: Dried rosemary works in a pinch but use half the amount — it’s sharper and can turn piney if overdone. Skip the garnish of extra fresh herb sprigs on the platter; not worth the extra prep.

If something goes sideways

  • Meat keeps sliding off the skewer: The mixture is probably too wet. This usually means the onion wasn’t squeezed out after grating. Wrap the grated onion in a clean cloth and wring out the liquid before adding it to the bowl. Chilling the shaped skewers for 20 minutes before grilling also helps them firm up.
  • Skewers are cooked outside but raw in the middle: The logs are too thick. Aim for about 2.5 cm (1 inch) in diameter — no thicker. A meat thermometer should read 160°F (71°C) at the center before you pull them.
  • Honey is burning before the meat is done: You’re adding it too early. Wait until the last 1–2 minutes of cooking, and make sure the grill isn’t running hotter than medium-high. If you’re using a charcoal grill, move the skewers to the cooler side before drizzling.
  • Skewers sticking badly to the grill: The grates weren’t hot enough when the meat went on. Let the grill fully preheat, oil the grates just before cooking, and don’t try to move the skewers in the first 3 minutes — they’ll release naturally once a crust forms.
  • Mixture feels too soft to shape: Refrigerate the seasoned meat for 30 minutes before shaping. Cold fat firms up and makes the mixture much easier to mold around the skewer.

  • Tasty Minced Meat Isolated On White Background500 g ground lamb (minced lamb) - preferably from grass-fed lamb for richer flavor

    3 tbsp Manuka honey - choose UMF 10+ for optimal taste and health benefits
  • Ripe Yellow Onion On A White Background1 small onion - grated
  • Garlic2 cloves garlic - finely minced
  • Rosemary1 tbsp rosemary - fresh, chopped
  • Ground Cumin1 tsp cumin - ground
  • Pile Of Red Paprika Powder0.5 tsp paprika
  • Coarse Sea Salt Top View1 tsp sea salt - or to taste
  • Ground Black Pepper Pile, Paths, Top0.5 tsp ground black pepper - freshly ground
  • Chicken Egg1 medium egg
  • Glass Bowl Of Olive Oil Isolated On White Background2 tbsp olive oil - for grilling

Instructions
 

  • In a large mixing bowl, combine the lamb mince, Manuka honey, grated onion, garlic, rosemary, cumin, paprika, salt, pepper, and the egg. Mix thoroughly with your hands until all ingredients are well incorporated.
  • Divide the mixture into eight equal portions. Shape each portion into a log around a wooden skewer, ensuring it is tight and secure to prevent it from falling apart during cooking.
  • Preheat a grill or grill pan over medium-high heat (about 190°C/375°F). Lightly oil the grates with olive oil to prevent sticking.
  • Grill the skewers for about 10-15 minutes, turning occasionally, until the lamb is cooked through and has developed a nice char on the outside.
  • Drizzle a little extra Manuka honey over the skewers as they finish cooking for an additional burst of flavor and caramelization.
