These are baked ground chicken meatballs seasoned with fennel seed, basil, oregano, and thyme — no breadcrumbs, no egg, no filler. The honest reason to make them is that a single batch gives you a high-protein, ready-to-go component that works across several different meals without any extra cooking.

What makes this version work

Two things matter here. First, skipping the binders entirely forces you to mix the ground chicken thoroughly — that mixing develops enough protein structure to hold the meatballs together without any help. Under-mix and they fall apart; mix well and they don’t need anything else. Second, rolling the seasoned meat into a log and slicing it into equal portions before shaping means every meatball is the same size, so they all hit 165°F (74°C) at the same time. Uneven meatballs mean some are overcooked and dry before the smaller ones are safe to eat — that’s the real reason uniformity matters, not aesthetics.

Shopping notes

  • Ground chicken: Buy it the day you cook it, or freeze it immediately. Ground poultry spoils faster than whole cuts. If your store only carries ground chicken breast, expect a slightly drier result — a thigh-and-breast blend holds moisture better.
  • Fennel seeds: Whole seeds are worth it here. A quick crush in a mortar or under a heavy pan before mixing releases more aroma than pre-ground fennel powder, which goes stale fast.
  • Dried herbs: Basil, oregano, and thyme are all standard pantry items. If yours have been sitting open for more than a year, they’ve lost most of their punch — skip the garnish and just use fresh amounts called for in the recipe.

Mistakes to avoid

  • Handling the mix with warm hands too long: Ground chicken is sticky and fat starts to smear if you overwork it while shaping. Chill the mixed meat for 15 minutes before rolling if your kitchen is warm.
  • Skipping the internal temperature check: Color is not a reliable indicator with ground chicken. Use a meat thermometer and confirm 165°F (74°C) at the center of the largest meatball before pulling the tray.
  • Crowding the pan: If the meatballs are touching, they steam instead of browning. Leave at least half an inch of space between each one on the parchment-lined tray.
  • Not seasoning enough: Ground chicken is mild. Taste a tiny cooked piece of the raw mix (cook it in a small pan) before you shape the batch — it’s the only way to know if you need more salt or fennel before baking 20 meatballs you can’t fix.
  • Serving without a sauce or pairing: These meatballs are lean. Without something alongside — a tomato sauce, tzatziki, broth, or even just olive oil — they can taste dry on the plate regardless of how well they were cooked.

Keeping and reheating

Cooked meatballs keep in an airtight container in the fridge for up to 4 days. For longer storage, freeze them in a single layer on a tray first, then transfer to a freezer bag — they’ll keep for up to 3 months and you can pull out exactly as many as you need. Reheat from the fridge in a covered skillet with a splash of water or broth over medium-low heat for about 5 minutes; this keeps them from drying out. From frozen, thaw overnight in the fridge before reheating the same way. The microwave works in a pinch but tends to toughen the outside — the skillet method takes only a couple of minutes longer and is worth it.

Ingredients
 
 

  • Chicken Mince1 pound ground chicken (minced chicken) - lean
  • Wooden Bowl Of Salt1 teaspoon salt
  • Ground Black Pepper Pile, Paths, Top½ teaspoon ground black pepper
  • Green Basil1 tablespoon basil
  • Thyme Herb1 tablespoon thyme
  • Oregano (Origanum Vulgare) Leaves1 tablespoon oregano
  • Heap Of Green Fennel Seeds2 teaspoons fennel seeds
  • Glass Bowl Of Olive Oil Isolated On White Background2 tablespoons olive oil

Instructions
 

  • Mix all ingredients together in a bowl.
  • Lay out the mixture onto a cutting board and form into a uniformly thick log.
  • Cut the log into equal-sized sections.
  • Roll each section into a ball and place it on a parchment papered sheet pan.
  • Bake at 375 degrees Fahrenheit (on convection setting if your oven has it) for 25 to 30 minutes until a minimum internal temperature of 165 degrees Fahrenheit is reached.
  • Serve with your favourite sauce and pasta or by themselves as an appetizer.
