Chicken taco pasta is ground chicken cooked with red pepper and mushrooms, then tossed with spaghetti, salsa, and cheese sauce and finished with shredded cheddar. It comes together in under an hour using ingredients most people already have on hand. That combination of low effort and low cost is the real reason to make it.

The short version of why this works

Two things matter here. First, cook the ground chicken completely before adding the vegetables — ground poultry must reach 165°F (74°C) internally, and crowding the pan with vegetables too early drops the temperature and causes the chicken to steam rather than brown. A little color on the meat means more flavor in the final dish. Second, pull the pan off the heat before stirring in the salsa and cheese sauce. Both are already seasoned and the cheese sauce can break or turn grainy if it hits direct heat. Residual warmth from the pan and the hot drained pasta is enough to bring everything together.

If something goes sideways

  • The sauce looks thin and watery: This usually means the mushrooms released liquid into the pan. Next time, cook mushrooms in a dry pan first until their moisture evaporates, then add them to the chicken. If it’s already happened, let the pan sit off heat for a minute — the pasta will absorb some of the excess.
  • The pasta clumped together before you mixed it in: Drain it, then toss it immediately with a small splash of the pasta cooking water to loosen it. Don’t rinse the pasta — that washes off the starch that helps the sauce cling.
  • The cheddar didn’t melt: The ingredients weren’t hot enough when you added it. Return the pan to low heat for 60 seconds, stirring gently, and it will melt down.
  • The dish tastes flat: Salsa brands vary a lot in salt and acidity. Taste before serving and adjust with a pinch of salt or a small squeeze of lime if you have one.
  • The chicken is cooked through but pale and soft: The pan wasn’t hot enough at the start. Let the oil heat for a full minute before adding the chicken, and resist stirring for the first two minutes so a crust can form.

Shopping notes

  • Cheese sauce: Jarred nacho cheese sauce works fine here. So does a homemade roux-based cheese sauce if you have leftover cheddar to use up — roughly the same volume.
  • Salsa: Any jarred salsa works. Chunky or smooth both give good results; chunky adds a bit more texture. Use whatever heat level suits your household.
  • Spaghetti: Any long or short pasta shape you already have in the cupboard is a fair swap — penne and rotini hold the sauce well. Whole wheat pasta works too, though it needs a minute or two longer to cook.
  • Shrimp (optional): Skip the shrimp — not worth buying a separate protein for such a small quantity. The dish is complete without it, and ground chicken already gives you plenty of protein at 38g per serving.

Make-ahead notes

Leftovers keep well in an airtight container in the fridge for up to 3 days. The pasta absorbs the sauce as it sits, so add a tablespoon of water or chicken broth when reheating in a pan over low heat, stirring until warmed through. You can also microwave it in 60-second intervals, stirring between each. For freezing, the dish freezes adequately for up to 6 weeks, but the pasta texture softens on thawing — if you plan to freeze it, slightly undercook the pasta to begin with. Thaw overnight in the fridge before reheating.

Ingredients
 
 

  • Chicken Mince1 pound ground chicken (minced chicken)
  • Red Pepper½ cup red pepper (red capsicum) - cut into bite-sized pieces
  • Champignon Mushroom½ cup mushrooms - cut into bite-sized pieces
  • Bunch Of Spaghetti Isolated On White250 grams spaghetti
  • Raw Shrimp½ cup shrimp - optional
  •  
    3 tablespoons cheese sauce
  • Salsa Sauce3 tablespoons salsa
  • Cheddar Cheese Block, Paths½ cup cheddar cheese - shredded

Instructions
 

  • Cook chicken in a frying pan with a dash of canola oil until chicken is cooked. Salt and pepper to taste. Add cut up red peppers and mushrooms (shrimp if using) and cook until soft for about 10 minutes.
  • Bring water to a boil, add a dab of canola cooking oil to avoid pasta sticking together, add the pasta, and cook until soft (about ten minutes. Drain pasta noodles and put them aside.
  • Remove the frying pan from heat, add both salsa and cheese salsa, noodles and mix all ingredients in a pan until combined.
  • Add shredded cheese on top, which should melt from the heated ingredients and serve immediately.
