Creating the Easy Chicken and Spinach Breakfast Sausage recipe was born out of a desire to marry convenience and nutrition without sacrificing flavor — something that busy households, like mine, often need. That’s where spinach came into play.

Spinach is a powerhouse leafy green that’s often overlooked, especially at breakfast time. It’s rich in iron, folate, vitamin K, and fiber — all nutrients our bodies need to kick off the day. But for many, incorporating greens in the morning isn’t second nature. By blending spinach into something familiar, like breakfast sausage, it’s an easy way to sneak vegetables into a meal without altering the flavors drastically. In fact, the spinach adds moisture and a pleasant earthiness to the sausage, making the patties more flavorful and tender.

For the protein base, I use ground chicken thigh. While chicken breast is leaner, chicken thighs offer more flavor and juiciness, which helps prevent the patties from drying out, especially when baked. The combination of sage, thyme, and marjoram is drawn straight from classic sausage seasoning blends, and adding a dash of cumin gives the mixture a subtle warmth that pairs beautifully with the spinach. Black pepper and cayenne bring just a touch of heat, making these sausages savory but not spicy.

One of the things I love most about this recipe is how versatile and foolproof it is. It uses simple ingredients that many of us already keep on hand. Even frozen spinach — something that might be sitting in the back of the freezer — becomes golden when pulsed into this protein-rich mix. And if you’re someone who prefers stove-top cooking, these can be pan-fried for extra browning, though I usually bake them for ease on busy mornings.

Just a splash of pure maple syrup or honey added to the mix gives it that familiar flavor without overpowering the herbs. Ingredients
 
 

  • Chicken Mince1 pound ground chicken (minced chicken) - thigh meat
  • Spinach1 cup spinach - frozen, chopped
  • Dried Sage, Herb Circle From Above, Over White½ teaspoon dried sage
  • Thyme Seasoning Spice In Bowl On White Background½ teaspoon dried thyme
  • Dried Marjoram, Herb Circle From Above, Over White½ teaspoon dried marjoram
  • Ground Cumin¼ teaspoon cumin
  • Coarse Sea Salt Top View¾ teaspoon Sea salt
  • Ground Black Pepper Pile, Paths, Top¼ teaspoon ground black pepper
  • Chicken Egg1 medium egg
  • Heap Of Cayenne Pepper1 pinch cayenne pepper - optional

Instructions
 

  • Preheat the oven to 350°F.
  • Add ingredients into a food processor and blend.
  • Form the mixture into patties on a parchment-lined baking sheet. You could also cook these in a skillet, but I find baking them to be quicker and easier, although you don’t get the same level of appealing “browning”.
  • Bake for 10-12 minutes on each side.
