These are BBQ chicken quesadillas made with roasted ground chicken breast, a two-cheese blend, and your favorite BBQ sauce, all pressed between whole-wheat tortillas and cooked on a hot griddle. The whole thing comes together in about 35 minutes, and most of that is hands-off oven time for the chicken. It’s a solid weeknight option when you want something hot, filling, and actually good.

The technique that matters

The most important step is getting your griddle or skillet genuinely hot before the quesadilla goes in. A lukewarm pan steams the tortilla instead of crisping it, and you end up with something soft and a little sad. Medium heat on a preheated surface gives you a golden, slightly crisp shell in just a few minutes per side while the cheese melts through. The second thing worth doing carefully is chopping the roasted chicken small — real mince, not rough chunks. Smaller pieces distribute evenly across the tortilla, so every bite has chicken and cheese rather than one big clump in the middle and bare edges.

Smart swaps

  • Colby Jack: If you can’t find it, Monterey Jack alone works fine. It melts cleanly and doesn’t fight the BBQ sauce.
  • Whole-wheat tortillas: Standard flour tortillas are a straightforward substitute and crisp up just as well. Corn tortillas are thinner and more fragile — they’ll work but are harder to flip without tearing.
  • BBQ sauce: Any style works here. A smoky sauce leans savory; a honey-based one adds sweetness. Skip the garnish of extra sauce drizzled on top before serving — not worth the extra dish.
  • Ground chicken breast: Ground chicken thigh has more fat and stays a little juicier after roasting. Either works at the same oven temperature and time.

Common problems and fixes

  • Filling falls out when slicing: Let the quesadilla sit on the cutting board for 60 seconds before cutting. The cheese firms up just enough to hold everything together.
  • Tortilla burns before cheese melts: Your heat is too high. Drop to medium-low and cover the pan loosely with a lid for 30 seconds — trapped heat melts the cheese without scorching the bottom.
  • Quesadilla slides apart when flipping: Press down lightly with a wide spatula before you flip, and use a second spatula or your hand to support the top. A 10-inch skillet that matches the tortilla size also helps keep it contained.
  • Chicken is dry after roasting: Ground chicken breast dries out fast at higher temperatures. Stick to 350°F and pull it at 30 minutes. If it’s already dry, toss it with a little extra BBQ sauce before assembling — it rehydrates the meat enough to matter.
  • Soggy center: Too much BBQ sauce is usually the culprit. Two tablespoons for one cup of chicken is the right ratio. More than that and the moisture has nowhere to go inside a sealed tortilla.

Leftovers and meal prep

Cooked quesadillas keep in the fridge for up to 3 days in an airtight container. Reheat them in a dry skillet over medium heat for 2 to 3 minutes per side — the microwave works but makes the tortilla chewy. The BBQ chicken filling on its own freezes well for up to 2 months; store it flat in a zip-lock bag and thaw overnight in the fridge. If you’re prepping ahead for the week, roast and mince the chicken in advance, mix in the BBQ sauce, and refrigerate the filling for up to 3 days. Assembly and cooking then takes under 10 minutes on the night.

Ingredients
 
 

  • Flour Tortillas4 medium tortillas - whole-wheat
  • Colby Jack Cheese⅔ cup Colby Jack cheese - shredded
  • Cheddar Cheese Block, Paths⅔ cup cheddar cheese - shredded
  • Chicken Mince1 cup ground chicken (minced chicken) - roasted
  • Bottle Of Sauce2 tablespoons BBQ sauce (barbecue sauce)

Instructions
 

  • Roast 2 boneless, skinless chicken breasts (generously brushed with olive oil) in a 350-degree Fahrenheit oven on a cookies sheet for 30 minutes or until cooked through.
  • Cool for 10 to 15 minutes, chop into mince and place 1 cup of chicken in a medium mixing bowl. Gently mix the BBQ sauce with the chicken.
  • On 2 tortillas, evenly sprinkle 1/3 jack cheese on each, then 1/2 cup of the chicken chunks and 1/3 cheddar cheese on each.
  • Place the remaining tortillas on top of each and push down lightly. Place the quesadilla on a preheated griddle or two large skillets on medium heat.
  • Cook one side until lightly browned and gently turn, lightly brown the other side. Place on cutting board and use a pizza cutter to slice into pieces. Serve with your favourite salsa, sour cream or guacamole.
