These tacos fill small flour tortillas with ground beef cooked in sesame oil with garlic, onion, kimchi, and soy sauce. The whole thing comes together in about 35 minutes, and the filling stores well — which makes it genuinely useful on a busy weeknight, not just a one-off novelty.

Ingredient notes

  • Kimchi: Buy it refrigerated, not shelf-stable. The fermented crunch and tang are what make this filling interesting. Drain off excess liquid before chopping or the beef will steam instead of brown.
  • Sesame oil: Use toasted (dark) sesame oil, not the pale raw kind. A little goes a long way — one tablespoon is enough for 500g of beef.
  • Flour tortillas: Small street-taco size (about 4–5 inches) works best here. Corn tortillas are a fine swap if you prefer them, but warm them properly or they’ll crack when you fold.
  • Gochujang (optional): If you add it, stir it in with the kimchi and soy sauce, not at the start — it scorches easily on high heat.

The short version of why this works

Two things matter here. First, browning the beef properly on medium-high heat — don’t crowd the pan and don’t stir constantly. You want some caramelized bits on the meat before the kimchi goes in. Second, adding the kimchi in the last three minutes rather than at the start. Kimchi cooked too long loses its texture and turns soft and sour in a flat way. A short cook keeps some bite and keeps the fermented flavor bright rather than muddy.

Common problems and fixes

  • Filling is watery: Kimchi releases liquid as it heats. Drain and squeeze the chopped kimchi in a paper towel before adding it. If the pan is already wet, turn the heat up and cook uncovered for an extra minute or two to drive off the moisture.
  • Beef is gray and steamed, not browned: The pan wasn’t hot enough, or the beef was added straight from the fridge. Let the beef sit at room temperature for 10 minutes before cooking, and make sure the sesame oil is shimmering before it goes in.
  • Tortillas tear when folding: They weren’t warm enough. Thirty seconds in a dry skillet per side, or wrap a stack in a damp paper towel and microwave for 45 seconds. Skip the garnish plate and just serve lime wedges on the side — not worth the extra dish.
  • Filling tastes flat: Soy sauce varies a lot by brand in saltiness and depth. Taste the filling before serving and adjust with a small splash more soy sauce or a squeeze of lime directly into the pan.
  • Beef not reaching safe temperature: Ground beef must reach 160°F (71°C) internally. If you’re unsure, use an instant-read thermometer — the 6–8 minute cook time assumes medium-high heat and a thin, broken-up layer of meat.

Leftovers and meal prep

The beef and kimchi filling keeps well in an airtight container in the fridge for up to 4 days. It also freezes cleanly — portion it into zip-lock bags or small containers and freeze for up to 2 months. Reheat from fridge in a skillet over medium heat for 3–4 minutes, or microwave in 60-second bursts, stirring between each. From frozen, thaw overnight in the fridge first. The filling actually tastes a little better on day two once the flavors have had time to settle, which makes it worth cooking a full batch even if you’re only feeding two people tonight. Tortillas are best warmed fresh each time rather than stored assembled.

Instructions

  • Stir in the chopped kimchi and soy sauce. Cook for an additional 3 minutes, allowing the kimchi to integrate with the beef.
  • Warm the tortillas in a separate pan or microwave, ensuring they are pliable for assembly.
  • Assemble the tacos by spooning the beef and kimchi mixture onto each tortilla. Top with fresh coriander and a squeeze of lime before serving.
