Crust:

  • Pile Of Flour Isolated On White Background2 cups all purpose flour (plain flour Australia and UK) - plus extra for rolling
  • Wooden Bowl Of Salt1 teaspoon salt
  • Unsalted Butter1 cup unsalted butter - cold and cubed
  • Store Of Fresh Water¼ cup water - ice, more if needed

Filling:

  • Raw Meat Mince1 pound ground beef (minced beef) - good quality
  • Ripe Yellow Onion On A White Background1 large onion - finely chopped
  • Garlic2 cloves garlic - minced
  • Glass Bowl Of Olive Oil Isolated On White Background1 tablespoon olive oil
  • Pile Of Flour Isolated On White Background2 tablespoons all purpose flour (plain flour Australia and UK)
  • Bowl Of Beef Bone Stock2 cups beef stock - preferably homemade
  • Worcestershire Sauce1 tablespoon Worcestershire sauce
  • Thyme Herb1 teaspoon thyme - dried
  • Ground Black Pepper Pile, Paths, Top1 teaspoon ground black pepper - freshly ground

Instructions
 

  • Crust Preparation: In a large bowl, combine the flour and salt. Add the cubed butter and blend using a pastry cutter or your fingertips until the mixture resembles coarse crumbs. Gradually add the ice water, kneading gently until the dough holds together. Divide into two disks, wrap in plastic, and chill for at least 30 minutes.
  • Filling Preparation: Heat olive oil over medium heat in a large skillet. Add the onions and garlic, sautéing until fragrant and translucent. Add minced beef, cooking until browned. Stir in flour, cooking for an additional 2 minutes. Gradually pour in beef stock, stirring until smooth. Add Worcestershire sauce, thyme, and black pepper. Simmer until thickened, about 10 minutes. Allow to cool slightly.
  • Assembling the Pie: Preheat the oven to 200°C (392°F). Roll out one dough disk on a floured surface to fit your pie dish, pressing down gently. Pour the beef filling into the crust-lined dish.
