  • Raw Meat Mince1 pound ground beef (minced beef) - preferably grass-fed
  • Taco Seasoning1 packet taco seasoning - choose a blend with moderate spice

Second Layer

  • Bowl With Brown Refried Beans Paste Close Up On White Background1 can refried beans - about 400 grams, preferably organic
  • Bowl Of Sour Cream1 cup sour cream - full-fat for creaminess
  • Cheddar Cheese Block, Paths2 cups cheddar cheese - grated, sharp

Toppings

  • Tomatoes1 cup tomatoes - diced, heirloom preferred

Instructions
 

  • Heat the olive oil in a large skillet over medium-high heat (175°C/347°F).
  • Add the beef mince and cook, breaking it up with a wooden spoon, until browned (about 8 minutes).
  • Stir in the taco seasoning, adjusting to taste and cook for another 2 minutes until aromatic. Set aside.
  • Warm the refried beans in a saucepan or microwave until just heated through for easy spreading.
  • In a large, shallow serving dish, evenly spread the refried beans as the first layer.
  • Spread the cooked beef mixture over the beans as the second layer.
  • Top with an even layer of sour cream, followed by a generous sprinkle of grated cheddar cheese.
