This is a sheet pan dinner of Italian pork sausage roasted alongside red pepper, zucchini, cherry tomatoes, and red onion — all seasoned with olive oil and Italian herbs. The honest reason to make it: 450 grams of sausage plus a full pan of vegetables lands about 18 grams of protein per serving with almost no active cooking time. One pan, 50 minutes start to finish, and dinner is done.

Before you start

The one technique that actually matters here is not crowding the pan. If the vegetables are piled on top of each other, they steam instead of roast — you get soft, watery pieces instead of edges with some colour and bite. Use a large rimmed sheet pan (roughly 18×13 inches) and spread everything in a single layer; if your pan is smaller, split the batch across two pans. The second thing worth doing is cutting the sausages to a consistent size before placing them — either leave them whole or slice into thirds, but keep the pieces uniform so they finish cooking at the same time as the vegetables. Uneven pieces mean some are overcooked by the time others are safe to eat.

Common problems and fixes

  • Sausages are browned outside but still pink inside: Tent the pan loosely with foil and give them another 5–8 minutes. An instant-read thermometer should read 71°C (160°F) at the centre — colour alone is not a reliable indicator with pork sausage.
  • Cherry tomatoes turn to mush and make the pan watery: Add them in the last 10–12 minutes of cooking rather than at the start. They need far less time than the pepper and zucchini and will hold their shape better.
  • Vegetables taste bland even after seasoning: The Italian seasoning in this recipe is a dry herb blend, which needs fat to bloom. Make sure every piece is actually coated in oil before it goes on the pan — a dry spot will taste flat no matter how much seasoning you use.
  • Red onion is still sharp and raw-tasting after roasting: Slice it thinner — no thicker than 5mm. Thick wedges of red onion take significantly longer to soften than the other vegetables in this recipe.
  • Sausage casings split and the filling dries out: Skip the garnish of extra herbs on top of the sausages — not worth the extra dish — but do avoid piercing the casings before cooking. Keeping them intact holds in the fat and keeps the meat juicy through the full roasting time.

Leftovers and meal prep

Leftovers keep well in an airtight container in the fridge for up to 3 days. Reheat in a 180°C (350°F) oven for 10–12 minutes to get the sausage skin back to something close to its original texture — the microwave works in a pinch but softens everything. For meal prep, you can slice the raw vegetables and store them undressed in the fridge up to 2 days ahead; dress and roast on the night. The cooked dish can be frozen for up to 2 months, though the zucchini and tomatoes will be noticeably softer after thawing. If you are freezing intentionally, slightly undercook the vegetables before freezing so they hold up better when reheated. Sliced leftovers also work well stirred through pasta or tucked into a wrap for lunch the next day, which stretches the protein across an extra meal.
