Gözleme is a Turkish folded flatbread cooked on a hot griddle — think of it as a thin, crispy quesadilla with a spiced ground lamb filling. The dough takes 30 minutes of hands-off resting time, so the total active work is under 30 minutes. That makes this a realistic weeknight dinner, not just a weekend project.

The short version of why this works

Two things matter here. First, rest the dough the full 30 minutes — the gluten relaxes enough that you can roll each piece to a thin oval without it springing back. Rush that step and the dough fights you, tears, and cooks up thick and doughy in the middle. Second, cool the lamb filling before you fold it into the dough. Hot filling steams the raw dough from the inside, making it gummy instead of crisp. Even 10 minutes on a cool plate makes a real difference. Everything else in this recipe is forgiving.

Common problems and fixes

  • Filling leaks out during cooking: Press the sealed edge firmly with your fingers, then run a fork along it. A light brush of water on the inner edge before folding also helps the dough stick to itself.
  • Flatbread burns before the inside cooks through: Your pan is too hot. Medium heat is the right setting — the flatbread needs 3–4 minutes per side to cook evenly without scorching. Cast iron holds heat aggressively, so start at medium-low if your burner runs hot.
  • Lamb filling is watery: Ground lamb releases a lot of fat and liquid. If you skip draining, the filling turns the dough soggy. Tilt the pan and spoon off the excess fat after browning, or drain in a colander briefly.
  • Dough sticks to the rolling surface: Flour the surface and the rolling pin, but also flour the top of the dough itself. If it keeps sticking, your dough may be slightly too wet — dust a little more flour in while kneading.
  • Flatbread is chewy, not crisp: The pan likely wasn’t hot enough when the gözleme went in. Preheat the dry skillet for at least 2 minutes before adding the first one. No oil in the pan — dry heat is what gives you the golden, blistered crust.

About the ingredients

  • Ground lamb: Grass-fed lamb has a stronger, more pronounced flavor. If that’s too assertive for your household, a 50/50 mix of ground lamb and ground beef tones it down without losing the character of the dish.
  • Smoked paprika: Regular sweet paprika works fine as a substitute, but smoked paprika adds a subtle depth that pairs well with lamb fat. Worth keeping a tin around.
  • Ground cinnamon: A quarter teaspoon sounds odd in a savory filling, but it rounds out the cumin and paprika rather than making things taste sweet. Skip the garnish — not worth the extra dish — and keep the focus on getting the spice balance right in the filling itself.
  • Fresh parsley: Dried parsley is not a useful substitute here. The fresh herb is stirred in off the heat specifically for brightness. If you don’t have parsley, fresh mint or fresh cilantro both work.

Keeping and reheating

Cooked gözleme keeps in the fridge for up to 3 days, wrapped tightly or in an airtight container. The lamb filling on its own freezes well for up to 2 months — freeze it flat in a zip-lock bag. Assembled, cooked gözleme can also be frozen for up to 1 month, though the texture of the dough softens slightly after thawing. To reheat, skip the microwave — it makes the dough limp. A dry skillet over medium heat for 2 minutes per side brings back most of the crispness. An air fryer at 350°F (175°C) for 3–4 minutes also works well. The lamb filling must reach 165°F (74°C) when reheating if you’re checking with a thermometer, though 160°F (71°C) is the safe minimum for ground lamb.

  • Glass Bowl Of Olive Oil Isolated On White Background1 tablespoon olive oil
  • Store Of Fresh Water0.75 cups water - warm, about 100°F (38°C)

For the Lamb Filling:

  • Glass Bowl Of Olive Oil Isolated On White Background1 tablespoon olive oil
  • Tasty Minced Meat Isolated On White Background1 pound ground lamb (minced lamb) - preferably grass-fed
  • Ripe Yellow Onion On A White Background1 small yellow onion - finely chopped
  • Garlic2 cloves garlic - minced
  • Ground Cumin1 teaspoon cumin - ground
  • Sweet Pepper Red Paprika Powder In Wooden Bowl Over White1 teaspoon smoked paprika
  • Heap Of Ground Cinnamon And Cassia Cinnamon Sticks0.25 teaspoon ground cinnamon
  • Kosher Salt0.5 teaspoon kosher salt - or to taste
  • Ground Black Pepper Pile, Paths, Top0.25 teaspoon ground black pepper - freshly ground

Instructions
 

  • In a mixing bowl, combine flour and salt. Drizzle in olive oil and gradually add warm water while mixing until a shaggy dough forms. Knead the dough on a lightly floured surface for about 5–7 minutes, or until smooth and elastic. Cover with a towel or plastic wrap and let rest for 30 minutes.
  • While the dough rests, heat olive oil in a skillet over medium heat. Add onion and sauté for 2–3 minutes until translucent. Stir in garlic and cook until fragrant, about 30 seconds.
  • Add ground lamb, breaking it up with a spoon. Cook until browned and no longer pink, about 7–8 minutes. Drain excess fat if needed.
  • Stir in cumin, paprika, cinnamon, salt, and pepper. Mix well and cook another 1–2 minutes to bloom the spices. Remove from heat and stir in chopped parsley. Set aside to cool.
  • Divide dough into 4 equal pieces. Roll each into a ball, then flatten into thin ovals (about 10 x 6 inches). Lightly flour your surface to avoid sticking.
  • Spoon about 1/4 of the lamb filling onto one half of the dough. Fold over to enclose and press edges firmly to seal. Repeat with the remaining dough and filling.
  • Heat a cast iron skillet over medium heat. Cook each gözleme for 3–4 minutes per side or until golden brown, crisp, and cooked through. Press with a spatula to ensure even browning.
  • Transfer to a cutting board, slice into three or four strips, and serve hot.

Can I make the dough ahead of time?

Yes — the dough can be made up to 24 hours ahead and stored in the fridge, wrapped in plastic. Take it out 15–20 minutes before you want to roll it so it comes back to room temperature and becomes pliable again.

Do I need a cast iron skillet, or will a regular pan work?

A regular non-stick pan works fine. Cast iron gives a slightly more even char and holds heat better between flatbreads, but it’s not essential. Whatever pan you use, make sure it’s fully preheated and dry before the gözleme goes in.
