This is a grain-free shepherd’s pie built on ground lamb and a mashed cauliflower topping — no flour, no dairy, no white potatoes. It fits paleo and elimination-diet guidelines without feeling like a stripped-down version of something better. Make a full baking dish on Sunday and you have real meals covered for several days of the week.

The technique that matters

Two things determine whether this dish holds together or turns into a soggy mess. First, brown the ground lamb properly — spread it in the pan, leave it alone for a couple of minutes, and let it develop color before breaking it up. Rushed browning steams the meat and you lose the savory depth that carries the whole filling. Second, drain the cauliflower thoroughly after steaming or boiling. Wet cauliflower mash will weep liquid into the filling during baking and the topping won’t hold its shape when you serve it. Press it in a clean towel or let it sit in a colander for a few minutes before blending. Both steps add maybe five minutes total and they make a real difference in the finished dish.

Ingredient notes

  • Ground lamb: Grass-fed is worth it here — the fat content is better and the flavor is noticeably richer. If lamb isn’t available, ground beef works and the dish is still very good. Cook either to an internal temperature of 160°F (71°C).
  • Cauliflower: Fresh heads give a drier mash than frozen florets, which hold more water. If using frozen, steam rather than boil and drain aggressively.
  • Thickening the filling: Without flour, the filling thickens through reduction. Don’t rush this step — give the liquid a few extra minutes on the heat until it looks glossy and coats the back of a spoon.
  • Peas: Traditional shepherd’s pie includes peas, but strict paleo guidelines exclude legumes. Leave them out or swap in diced zucchini or green beans if you want that color and bulk.

Mistakes to avoid

  • Skipping the resting time after baking: Pull the dish from the oven and let it sit for 10 minutes before cutting. The filling firms up as it cools slightly and portions come out cleanly instead of collapsing.
  • Overloading the cauliflower topping: A thick layer looks generous but takes much longer to heat through in the oven and can stay cold in the center while the edges over-brown. Keep the topping layer around three-quarters of an inch.
  • Not seasoning the cauliflower mash aggressively enough: Cauliflower is bland on its own. Taste it before it goes on the filling and season it more than feels comfortable — it will mellow during baking.
  • Using a dish that’s too small: The filling bubbles up during baking. A dish that’s too shallow will spill over in the oven. Use a deep 9×13 or equivalent — skip the garnish on top too, it’s not worth the extra dish.
  • Refrigerating while still hot: Let the baked pie cool to room temperature before covering and refrigerating. Trapping steam under the lid makes the cauliflower topping wet and loose by the next day.

Storage and reheating

Covered in the fridge, this keeps well for up to 4 days — the filling actually tastes better on day two once the flavors settle. Portion it into individual containers straight after cooling and reheating is fast all week: microwave a single portion for 2–3 minutes, or reheat covered portions in a 350°F (175°C) oven for about 20 minutes. For freezing, cool completely, portion into airtight containers, and freeze for up to 3 months. Thaw overnight in the fridge before reheating — don’t go straight from frozen to oven or the cauliflower topping turns watery. The filling freezes better than the topping, so if you’re planning ahead, consider freezing the filling separately and making fresh cauliflower mash when you’re ready to assemble and bake.

Ingredients
 
 

  • Tasty Minced Meat Isolated On White Background1 ½ pounds ground lamb (minced lamb)
  • Celery Isolated On White Background. Top View3 stalks celery - diced
  • Garlic3 cloves garlic - minced
  • Bowl Of Fresh Chicken Broth1 cup chicken stock (chicken broth or chicken bouillon)
  • Wooden Bowl Of Salt1 teaspoon salt
  • Worcestershire Sauce1 tablespoon Worcestershire sauce
  • Ground Black Pepper Pile, Paths, Top1 teaspoon ground black pepper
  • Thyme Seasoning Spice In Bowl On White Background1 teaspoon dried thyme
  • Oregano Dried In Wooden Bowl Over White1 teaspoon dried oregano
  • Rosemary2 teaspoons rosemary
  • Ripe Yellow Onion On A White Background1 medium yellow onion - chopped
  •  
    ½ pound cremini mushrooms - peeled and coarsely chopped
  • Carrot Vegetable With Leaves3 medium carrots - peeled and diced
  • Cauliflower2 heads cauliflower - steamed until very soft
  • Glass Bowl Of Olive Oil Isolated On White Background2 tablespoons olive oil
  • Coconut Oil1 tablespoon coconut oil

Instructions
 

  • First, you must melt coconut oil in 2 large pans over medium heat.
  • Add onion, mushrooms, carrots, celery and garlic to one pan. Sauté until all of them gets soft (approximately 13 minutes).
  • Add ground meat to another pan. Sautee until cooked through.
  • Season ground meat with Worcestershire sauce or coconut aminos (optional), salt, pepper, thyme, oregano, and rosemary.
  • Combine meat with vegetables in a medium rectangular Pyrex dish.
  • Pour the broth evenly over the meat and vegetable mixture.
  • Preheat the oven to 350 degrees Fahrenheit.
  • Using a food processor, puree your cauliflower with 2 tablespoons of olive oil. Do it until the cauliflower mash is consistently smooth throughout.
  • Spread the pureed cauliflower over the meat and vegetable base.
  • Bake, uncovered, for 30 minutes.

Can I assemble this the night before and bake it the next day?

Yes — assemble the pie fully, cover it tightly, and refrigerate overnight before baking. Add about 10–15 extra minutes to the bake time since you’re starting from cold, and check that the filling is bubbling at the edges before pulling it out.

Can I use ground beef instead of lamb?

Ground beef works well and is an easy swap in equal quantity. The flavor is milder than lamb, so you may want to add a little extra rosemary or thyme to compensate — cook it to 160°F (71°C) just the same.

Why is my cauliflower topping turning grey after baking?
