These are baked ground chicken meatballs simmered in a homemade tomato sauce, finished with melted Colby cheese on top. Ground chicken is lean, so the recipe builds moisture and flavor into the mix itself — coriander, dried chili, garlic, and tomato paste all go straight into the meat. Serve it over the lime-coriander rice and you have a complete, high-protein meal from one pan and one pot.

Before you start

The single most important step is not overworking the chicken mince when you mix it. Ground chicken tightens up fast — stir just until the ingredients are combined, then stop. Overworked mince produces dense, rubbery meatballs that no amount of sauce will fix. The second thing that matters is getting the meatballs to an internal temperature of 165°F (74°C) before they go into the sauce. Ground poultry must never be served undercooked or pink at the center. Use an instant-read thermometer on the thickest meatball in the batch — it takes seconds and removes all guesswork.

Ingredient notes

  • Wholemeal breadcrumbs: These hold moisture better than fine white breadcrumbs in a lean chicken mix. Panko works in a pinch but gives a slightly drier result.
  • Coriander (cilantro): Fresh is used here for its brightness. If you genuinely dislike it, flat-leaf parsley is the cleanest swap — it won’t fight the other flavors.
  • Dried red chili: The heat is mild at the quantity in the recipe. If you want more warmth, add a pinch of smoked paprika to the sauce rather than doubling the chili in the meatballs — it’s easier to control.
  • Colby cheese: A mild, medium-melt cheese. Monterey Jack or low-moisture mozzarella both work. Skip the garnish of extra fresh herbs on top after baking — not worth the extra dish.
  • Spring onions: These add moisture as well as flavor in a chicken meatball. Don’t substitute with dried onion flakes; the texture difference shows.

Make-ahead notes

The meatballs and sauce can be made separately up to 2 days ahead and stored in the fridge. Keep them together in the casserole dish, covered, once assembled — the meatballs continue to absorb flavor. Reheat covered in a 350°F (175°C) oven for 15–20 minutes, then add the cheese for the final 5 minutes uncovered. The whole assembled dish (without cheese) freezes well for up to 3 months; thaw overnight in the fridge before reheating. The lime-coriander rice is best made fresh, but plain cooked rice freezes fine in portions and reheats in the microwave with a splash of water in about 2 minutes.

Common problems and fixes

  • Meatballs fall apart on the baking tray: The egg or breadcrumb ratio is off, or the mix was too wet. Chill the shaped meatballs in the fridge for 15 minutes before baking — this firms them up without adding more binder.
  • Sauce is watery after simmering: Crushed tomatoes vary a lot by brand. If the sauce looks thin, let it reduce uncovered on medium heat for an extra 5 minutes before adding the meatballs.
  • Cheese browns too fast in the oven: Your oven runs hot, or the casserole dish is too close to the top element. Move the rack to the middle and watch it from the 3-minute mark.
  • Meatballs are dry inside despite hitting the right temperature: Ground chicken with very low fat content (some packages are nearly all breast meat) dries out quickly. Look for mince labeled as a blend, or mix in a small amount of olive oil — about a teaspoon per 500g — directly into the meat mixture.
  • Rice turns out gummy: Too much water or the lid was lifted during cooking. Rinse the rice before cooking and add the lime juice after the rice is done, not during — acid added mid-cook can affect texture.

Meatball Ingredients

  • Chicken Mince500 grams ground chicken (minced chicken)
  • Garlic3 cloves garlic
  • Ground Black Pepper Pile, Paths, Top1 pinch ground black pepper
  • Green Onion, Spring Onion3 sytalks spring onions
  • Red Chilly Peppe½ teaspoon red chili (red chilli in British English) - dried
  • Fine Breadcrumbs, Also Breading Or Crispies In Wooden Bowl¾ cup breadcrumbs - wholemeal
  • Spoon With Tomato Paste Isolated On White Background1 tablespoon tomato paste
  • Chicken Egg1 medium egg
  • Big Bunch Of Fresh Green Cilantro Isolated½ cup cilantro (coriander)

Sauce Ingredients

  • Glass Bowl Of Olive Oil Isolated On White Background1 teaspoon olive oil
  • Garlic3 cloves garlic
  • Ripe Yellow Onion On A White Background1 medium yellow onion
  • Tomatoes800 grams tomato - crushed
  • Spoon With Tomato Paste Isolated On White Background1 tablespoon tomato paste
  • Colby Jack Cheese1 cup Colby Jack cheese - low-fat and shredded

Instructions
 

  • Preheat the oven to 200 degrees Celsius. Set a rice cooker with the uncooked rice, water and lime juice and cook. After the rice has cooked, stir through the coriander, and leave on ‘warm’ until ready to serve.
  • In a large bowl, put all meatball ingredients and combine(making sure to dice the garlic, spring onion, coriander before adding and beat the egg well before adding).
  • Mix all the ingredients through the chicken mince until well combined. Line a baking tray with baking paper. Roll the chicken mixture into even-sized balls and place on the baking paper; you should have roughly 24 small balls. Put the tray in the oven and bake for 20 to 25 minutes until the meatballs are cooked.
  • While the meatballs cook, start making the sauce. Heat a saucepan with some of your olive oil and add the 3 cloves of garlic and diced brown onion. Once the garlic and onion are lightly browned, add the crushed tomatoes and tomato paste and stir thoroughly. Cook the meatballs for 5 to 10 minutes, and then stir through the coriander.
  • After 20 to 25 minutes, remove the meatballs from the oven, and add half of them to a casserole dish. Cover the meatballs with half of the tomato sauce. Place the remaining meatballs on top, and cover with the rest of the tomato sauce. Shake the casserole dish lightly to flatten everything. Top with the shredded cheese and bake uncovered in the oven for another 5 minutes until the cheese melts.
