This recipe uses ground chicken mixed with a yogurt-and-vinegar marinade and a hand-ground spice blend — cardamom, cinnamon, nutmeg, and black pepper — then cooked in a skillet, on a grill, or in the oven and stuffed into pita. It comes together in 40 minutes of active time, and most of the work is just waiting for the marinade to do its job. The technique that matters

The marinade only works if the ground chicken has real contact with it. Unlike whole fillets, ground chicken can clump, so mix it thoroughly with the yogurt, vinegar, garlic, lemon juice, and spice powder until everything is evenly coated — no dry pockets. Then press it flat in the bowl, cover it, and refrigerate. When it comes time to cook, don’t crowd the pan. Ground chicken releases moisture quickly, and a crowded skillet turns into a braise instead of a sear. Cook in batches if needed, spreading the meat in a thin layer and leaving it alone for 2–3 minutes before breaking it up. You want some browning on the edges — that’s where the flavor is. Pull it off the heat at an internal temperature of 165°F (74°C); ground poultry must never be served undercooked.

Troubleshooting

  • Meat tastes flat despite the marinade: The spice grind was probably too coarse or the spices were old. Cardamom pods and cinnamon sticks lose potency fast once opened. If your spices smell faint, use a little more than the recipe calls for and grind until the powder is fine, not chunky.
  • Filling is watery in the pita: The yogurt and vinegar in the marinade add liquid. After cooking, let the meat rest in the pan off the heat for a minute and tip off any pooled liquid before assembling. A slotted spoon when filling the pita also helps.
  • Meat sticks to the skillet: Ground chicken is lean and sticks easily, especially in a stainless pan. Use a well-seasoned cast iron or non-stick skillet, or add a thin film of neutral oil before the meat goes in.
  • Pita tears when you fill it: Cold pita splits. Warm it in a dry pan for 30 seconds per side or wrap in a damp paper towel and microwave for 15 seconds before filling.
  • Garlic flavor is too sharp: The recipe uses two separate garlic additions. If raw garlic is too aggressive for your taste, crush all 13 cloves into the marinade rather than adding any separately — the acid in the vinegar and lemon will mellow it during the marinating time.

Substitutions that actually work

  • Cardamom pods: If you only have ground cardamom, use ¼ teaspoon in place of the 3 pods — the seeds inside the pods are small, so the volume is modest.
  • White vinegar: Apple cider vinegar is a fine swap at the same quantity. Red wine vinegar also works. Avoid balsamic — it’s too sweet and will change the flavor profile noticeably.
  • Plain yogurt: Full-fat Greek yogurt thinned with a tablespoon of water works well. Sour cream can substitute in a pinch, though the tang is slightly different. Skip the flavored yogurts entirely.
  • Cinnamon sticks: Ground cinnamon works — use ½ teaspoon for 2 sticks. It won’t grind the same way in the mortar, so just stir it directly into the marinade liquid.
  • Pita bread: Flatbread, flour tortillas, or naan all hold the filling fine. Skip the garnish of fresh greens if you don’t have them — not worth a separate grocery run.

Make-ahead notes

The marinated raw ground chicken keeps well in the fridge for up to 24 hours — overnight is actually the sweet spot, since the yogurt and acid have more time to work through the meat. Don’t push past 24 hours or the texture starts to break down. Cooked filling stores in an airtight container in the fridge for up to 3 days. To reheat, use a skillet over medium heat with a splash of water to loosen it, stirring until it hits 165°F (74°C) again — the microwave works too but tends to dry it out. For freezing, freeze the cooked filling only (not the raw marinated meat), in portions, for up to 2 months. Thaw overnight in the fridge before reheating.

  • Plain Yogurt¾ cup plain yogurt

  • Heap Of Ground Nutmeg And Whole Nutmeg Seeds¼ teaspoon nutmeg - shavings

Instructions
 

  • To make the spice mix for the marinade, put the following into a pestle and mortar: sprig of cinnamon, cloves, cardamom seeds, pepper, salt and nutmeg shavings. Grind for a few minutes until the spices are broken down into a coarse powder.
  • Pour the yogurt, vinegar, crushed garlic, lemon, and powdered spice mix into a bowl. Cut or poke the fillets so they will marinade well, and then add the whole chicken fillets to the liquid and leave them to marinate for a few hours (or overnight) in the fridge.
  • When ready, remove the marinade from the fridge and cook on a BBQ, skillet, or roast in an oven. If you cook it in the oven, you’ll need to be careful not to overcook or dry out the meat.
  • Assemble the shawarma by putting your choice of sauce and the meat stuffing into pita bread.
