This is a ground lamb and spinach casserole with a cheesy breadcrumb crust, baked until golden. It takes about 75 minutes start to finish and feeds four people well. The main reason to make it: one pan of protein, greens, and a crunchy topping that most people at the table will actually finish.

The technique that matters

Two things decide whether this bake is good or just okay. First, reduce the stock properly before adding the spinach. If you skip this step and the mixture is still loose when it goes into the baking dish, the crust sinks and you get a soggy bottom layer. Give it a full five minutes at a steady simmer — it should look thick enough to hold its shape when spooned. Second, bloom the cumin and coriander directly in the hot lamb fat for a full minute before adding the tomato paste. Dry spices added to wet ingredients taste raw and flat. Thirty seconds in hot fat changes the flavor noticeably, and a minute is better. These two steps are where most of the flavor and texture actually come from.

Ingredient notes

  • Ground lamb: Grass-fed has a stronger, more distinctive flavor. If your household finds lamb gamey, a 50/50 mix of ground lamb and ground beef tones it down without losing the character of the dish.
  • Baby spinach: Regular spinach works fine — just remove thick stems and chop it roughly. Frozen spinach is a practical swap; thaw it completely and squeeze out as much water as possible before folding it in, or the mixture will be too wet.
  • Breadcrumbs: Panko gives a noticeably crunchier crust than standard dried breadcrumbs. Skip the garnish — not worth the extra dish. The crust does the textural work on its own.
  • Beef stock: Low-sodium stock lets you control the salt level, which matters more here because the cheese also adds saltiness. Chicken stock works as a substitute with no meaningful difference in the final dish.

Leftovers and meal prep

Leftovers keep well in an airtight container in the fridge for up to three days. Reheat individual portions in a 350°F (180°C) oven for 12–15 minutes to bring the crust back to life — the microwave works in a pinch but turns the topping soft. The lamb and spinach base (without the breadcrumb and cheese topping) freezes well for up to two months; freeze it flat in a zip-lock bag, then thaw overnight in the fridge, transfer to a baking dish, add fresh breadcrumbs and cheese, and bake from cold at 350°F for about 25–30 minutes. This makes it a genuinely useful make-ahead option for busy weeknights.

What can go wrong

  • Crust burns before the filling is hot through: This happens if the filling goes into the dish cold or the oven runs hot. Tent the dish loosely with foil after the first 20 minutes if the top is browning too fast, then remove the foil for the last 10 minutes.
  • Watery filling that pools around the crust: Caused by underdrained spinach or insufficient stock reduction. If you notice excess liquid after folding in the spinach, cook the mixture for another 2–3 minutes over medium heat before transferring to the baking dish.
  • Lamb clumping into large chunks: Ground lamb has a higher fat content than beef and can seize into lumps if the pan is too hot. Keep the heat at medium and break the meat apart continuously for the first two minutes of browning.
  • Cheese layer sliding off: If the breadcrumbs go on top of a wet filling, the cheese has nothing to grip. Spread the breadcrumbs first, press them lightly, then add the cheese so it melts into the crumbs and stays put.
  • Underseasoned filling: The stock and tomato paste add some salt, but ground lamb needs seasoning at the browning stage, not just at the end. Taste the meat mixture before adding the spinach and adjust salt and pepper then.

Instructions

  • Transfer the lamb and spinach mixture into a baking dish. Top with an even layer of breadcrumbs, followed by the grated cheese.
