Wash baby corn with fresh water. Then cut it half in a long length and cut half or into three-piece depending on how long the baby corn is to make it for a mouthpiece.
Peel garlic the smash, and cut it into pieces.
Add cooking oil to cover all the pan and warm over medium heat.
Add garlic until it turns a bit yellow for about 30 seconds.
Add pork mince, then put 1 tablespoon of oyster sauce, stir and mix with baby corn.
Turn the heat up to maximum level and put sliced corn and carrots into the pan. Add 1 teaspoon of water.
Separate the stir-fried corn to the other side of the pan. Then put 2 eggs in the empty middle spot and wait a bit. Then mix eggs with corn.
Stir fry and mix it all together.
Add 1 tablespoon of oyster sauce and 1 teaspoon of water to make it not too dry.
Add sugar, soy sauce, and fish sauce all together. Stir fry until the corn is softened.
