Buffalo hot sauce makes everything better, at least for me. And this buffalo chicken meatloaf is my go-to spicy meatloaf when I want an upgraded meatloaf recipe.

Sauce Ingredients

buffalo sauce

butter

all purpose flour (plain flour Australia and UK)

heavy cream (also called thickened cream)

Instructions
Meatloaf Instructions
Preheat oven to 375 degrees Fahrenheit.
Saute onions in olive oil until translucent.
Add garlic and saute until fragrant.
In a mixing bowl, combine chicken, celery, onion mixture, Cheez-it crackers, egg, salt, cheddar cheese and wing sauce.
Stir until combined.
Spread mixture evenly into a loaf style casserole dish.
Cover with aluminium foil.
Bake for 45 minutes.
Sauce Instructions
In a skillet, combine wing sauce and butter, stir.
Cook the suace over medium heat until butter is melted.
Add flour, whisking constantly. The sauce will become a thick paste. Cook for 5 minutes, stirring constantly.
Add cream and milk, whisking constantly. Cook until sauce thickens and is slightly bubbly.
Remove meatloaf from the oven and pour a 1-inch layer of sauce on top.
Return to oven uncovered for 5 minutes.
Serve with extra sauce on the side.
