1teaspoonground cumin
½teaspoonsalt
¼teaspoonground black pepper
2tablespoonscilantro (coriander) - chopped, fresh
Instructions
Preheat the oven to 350°F (175°C).
Cook the rice according to package instructions and set aside.
In a large skillet over medium-high heat, brown the ground beef with the onions, green peppers, and garlic until the beef is no longer pink and the vegetables are softened.
Add the chili powder, cumin, salt, and black pepper to the skillet and stir to combine.
Add the diced tomatoes (undrained), black beans, corn, and salsa to the skillet and stir to combine.
Bring the mixture to a simmer and let it cook for 5-7 minutes, stirring occasionally.
In a 9x13 inch baking dish, layer the cooked rice on the bottom of the dish.
Pour the beef and vegetable mixture on top of the rice.
Sprinkle the shredded cheddar cheese over the top of the beef mixture.
Bake in the preheated oven for 20-25 minutes or until the cheese is melted and bubbly.
Sprinkle chopped cilantro over the top of the casserole before serving.
