Pastry Ingredients

250 grams puff pastry - preferably homemade or high-quality store-bought

Filling Ingredients

300 grams rabbit meat - minced, preferably from farm-raised rabbits
1 medium white onion - medium-sized, finely chopped
3 cloves garlic - minced
1 tablespoon olive oil - extra virgin
1 teaspoon mixed Mediterranean herbs - such as rosemary, thyme, and oregano
0.5 teaspoon salt - preferably sea salt
0.25 teaspoon ground black pepper - freshly ground

For Egg Wash

1 medium egg - lightly beaten

Instructions

Preheat your oven to 200°C (392°F). Prepare a baking sheet lined with parchment paper.
In a skillet, heat the olive oil over medium heat. Sauté the onion until translucent, approximately 5-7 minutes.
Add garlic to the skillet and sauté for an additional 1-2 minutes, just until fragrant. Stir in the minced rabbit meat, and cook until browned, around 10 minutes. Season with salt, pepper, and mixed herbs. Let the mixture cool slightly.
Roll out the puff pastry on a floured surface to about 1/8 inch thickness. Cut out 8cm (3 inches) circles using a pastry cutter.
Place a spoonful of the filling onto the center of each pastry circle. Fold the pastry over the filling and crimp the edges with a fork to seal.
Place pastizzi on the prepared baking sheet. Brush each with the beaten egg to achieve a golden finish. Bake for 20-25 minutes or until the pastry is crisp and golden brown.
Remove from the oven and let them cool for 5 minutes before serving.

Notes

Chef's Tip: For a richer flavor, marinate the rabbit meat with the herbs and garlic for a few hours before mincing. If rabbit is unavailable, consider using chicken thighs or pork as substitutes.
