Minced Beef and Stilton Turnovers

Ingredients
1 tablespoon olive oil - extra virgin preferred
1 small onion - finely chopped
9 ounce ground beef (minced beef) - preferably grass-fed
1 clove garlic - minced
1 teaspoon thyme - fresh leaves, chopped- 3.5 ounce Stilton cheese - crumbled
2 tablespoons Worcestershire sauce- 1 sheet puff pastry - store-bought or homemade, thawed
1 large egg - beaten, for egg wash
1 pinch salt - to taste
1 pinch ground black pepper - freshly ground, to taste
Instructions
- Preheat your oven to 200°C (392°F).
- In a skillet over medium heat, heat the olive oil. Add the chopped onion and sauté until soft and golden, about 5-7 minutes.
- Add the minced beef, stirring it until it's browned and cooked through. This should take approximately 8-10 minutes.
- Stir in the minced garlic and thyme, cooking until fragrant, about 30 seconds.
- Mix in the crumbled Stilton cheese and Worcestershire sauce until the cheese is melted and the mixture is cohesive. Season with salt and pepper to taste, then let it cool.
- Roll out the puff pastry sheet on a lightly floured surface and cut it into 4 squares.
- Place a generous tablespoon of the beef and Stilton mixture in the center of each square.
- Brush the edges of the pastry with the beaten egg, fold over into a triangle, and seal the edges with a fork.
- Transfer the turnovers to a baking sheet lined with parchment paper. Brush the tops with more egg wash for a golden hue.
- Bake for 15-20 minutes or until the pastry is puffed and golden brown.
Notes
For a vegetarian option, substitute beef with mushrooms for a robust earthiness. For faster onion caramelization, add a pinch of salt to draw out moisture. Ensure your puff pastry is cold when working with it, as warm pastry can become difficult to handle.
