Lamb Mince and Sweet Potato Tacos

Ingredients
2 tablespoons olive oil - extra virgin
1 pound ground lamb (minced lamb) - organic
1 cup red onion - finely chopped
3 cloves garlic - minced
1 tablespoon cumin - ground
1 teaspoon smoked paprika
2 teaspoons chili powder
2 cups sweet potato - cubed and roasted
8 pieces corn tortillas - soft, 6-inch
1 cup avocado - sliced or diced
1 cup feta cheese - crumbled
0.5 cup cilantro (coriander) - chopped
1 piece lime - cut into wedges, for serving
Instructions
- Preheat your oven to 200°C (390°F). Place cubed sweet potatoes on a baking sheet, drizzle with 1 tablespoon of olive oil, and season with salt. Roast for 25 minutes or until tender and slightly caramelized.
- While the sweet potatoes are roasting, heat the remaining olive oil in a pan over medium heat. Add the chopped red onion and sauté until translucent, about 4 minutes.
- Add minced garlic to the onion and sauté for an additional minute until fragrant. Stir in the lamb mince, breaking it up with a wooden spoon, and cook until browned, about 6-8 minutes.
- Season the lamb with ground cumin, smoked paprika, and chili powder, combining until the spices are evenly distributed and aromatic. Remove from heat.
- Warm the corn tortillas in a dry skillet or directly over a gas flame for a few seconds on each side until pliable.
- To assemble, fill each tortilla with a portion of the lamb mixture and roasted sweet potatoes. Top with avocado, crumbled feta, and cilantro. Serve immediately with lime wedges on the side.
Notes
For added depth, try adding a dollop of Greek yogurt or a sprinkling of pomegranate seeds for a touch of tang and burst of flavor.
