Ingredients
4 medium zucchinis - preferably organic
2 cups chicken breast - cooked, shredded
1 cup enchilada sauce - homemade or high-quality canned
1 cup black beans - rinsed and drained- 1 cup sweet corn - fresh or frozen
1 cup cheddar cheese - shredded
½ tsp cumin
¼ tsp salt
¼ tsp ground black pepper
2 tbsp cilantro - fresh, chopped, for garnish
Instructions
- Preheat your oven to 200°C (400°F).
- Halve the zucchinis lengthwise and scoop out the centers to create boats, leaving about 0.5 cm (1/4 inch) shell. Ensure even edges for even cooking.
- In a mixing bowl, combine shredded chicken, enchilada sauce, black beans, corn, cumin, salt, and pepper. Stir until well-blended, ensuring every bite will have a perfect mix of flavors.
