Jane Simpson
Ground Chicken Schnitzel is a great alternative to the traditional recipe with veal. It is healthier and still delicious.

Instructions
Blend in the cheese, garlic and seasonings into the ground chicken and put them in the fridge for about 10 minutes.
Take portions of the meat mixture in your oiled palm and shape them into several medium-sized round patties.
Coat each patty with flour before dropping it in the beaten egg.
Now cover every corner of the patty with breadcrumbs and dip it in the oil.
Fry the patties over moderate heat until they turn crisp and golden brown.
Transfer the fried schnitzels to a plate lined with paper towels to do away with excess oil.
Serve with lemon wedges and fried or mashed potatoes or fresh salad by its side.
