Instructions
In a heavy-bottomed pot, heat oil on medium-high heat. Add onion and bell pepper, then cook until onion is translucent for about 3 to 4 minutes.
Add turkey and break up the meat with a wooden spoon. Cook until no longer pink.
Add chipotle peppers, adobo sauce, tomato sauce, pumpkin and broth, stirring to combine. Bring to a boil, then lower heat.
Add all spices, stir, and cover the pot. Allow to slowly cook for an hour (or more extended if you have the time!)
If desired, with 15 to 20 minutes left of cooking, add the beans and season with salt and pepper.
Serve hot with your favourite toppings.
