Preheat the oven to 350 degrees Fahrenheit and lightly coat the 13×9 baking dish with vegetable oil(I don't use non-stick spray).
Cook the ground pork in a medium skillet over med-high heat until no longer pink. Drain the grease away and set it aside.
In a medium saucepan, combine grits, salt and water. Bring to a boil, stirring frequently. Once boiling, reduce heat and simmer for approx 20 to 25 minutes (stirring occasionally)
Next, add pork (reserve approximately 1/4 cup), pepper, cheddar cheese(reserve approximately 1/4 cup) and cream cheese to the grits.
Stir the mixture well and pour it into the greased baking dish. Sprinkle with remaining sausage and cheese.
Bake the pork and grits casserole for 10 minutes or until the cheese is melted.
