Instructions
Tzatziki Sauce:
Slice cucumber and place in a colander. Sprinkle with salt and let stand for 30 minutes to draw out any extra moisture. Wipe cucumbers with a paper towel and place them in the bowl of the food processor. Add remaining ingredients and mix until well blended. Store in the refrigerator for at least 2 hours before serving to give the flavors a chance to mix.
Meat Patties:
Preheat the oven to 400°F. Combine onion, garlic and Greek seasoning in a food processor. Add ground beef and spinach to a large bowl and use your hands to mix it all together.
Using your hand, form 8 meat patties and put them in a mini-muffin tin. Bake for about 20 minutes or until the meat patties reach an internal temperature of 160°F.
Assembly:
Large lettuce leaves (we used green leaf lettuce, the original recipe used iceberg)
Sliced red onions
Place meat patties on lettuce. Top with Tzatziki and onion. Wrap up with another large lettuce and enjoy.
