Looking for a new mince recipe idea? Go no further than this mince and Potato Curry recipe. Not to spicy and high with yummy. Easy and quick to make and delicious to eat.
4mediumpotatoes - diced into about centimeter cubes
1mediumyellow onion - diced
2teaspoonsgarlic - minced
2tablespoonsrice bran oil
2tablespoonscurry powder
1cantomato - diced
1pinchground black pepper
1teaspoonHimalayan salt (pink salt)
¼teaspoonground cinnamon
¼teaspoonground ginger
½teaspoonturmeric
1cuppeas
1cupcorn
Instructions
Add oil to the pan and heat.
Fry onion and garlic until it starts to soften.
Add diced potato to the pan and sprinkle on half the salt. Fry for about 5 minutes (I made this up as I went along. I was going to fry it until it was brown but decided to quicken the whole process).
Remove the onion/potato mix from the pan and set it aside.
Add mince to the pan and fry until brown, making sure you use a spatula to break up the mince.
Once brown, add the salt, pepper, spices and veggies and give it a good stir.
Add everything back into the pan and reduce the heat to a simmer for about 25 minutes (making sure your potatoes are cooked through).
Dish it up and enjoy (I enjoyed it with shredded cheese too).
