Spray a pan with cooking spray and add the ground turkey. Cook on medium to high heat for about 5-7 minutes, frequently stirring to ensure all of the meat is thoroughly cooked and browned.
Add about 3/4 a packet of low sodium taco seasoning. You can choose your level of spice (mild, medium, hot). Add about 1/2 cup of your favourite salsa. Stir and saute this for a few more minutes, making sure to mix well. Add a few drops of water if necessary.
While the meat is cooking, clean and cut the bell peppers, you can use any colour.
Place the bell peppers into an oven-safe dish. Scoop the turkey meat into each pepper and then top with a sprinkle of Mexican blend cheese (2-3 tbsp). Place the peppers in the oven and cook at 375°F for 15-20 minutes or until golden brown.
While the meat is cooking, clean and chop up about 1 cup of fresh tomatoes and two jalapenos, add the vegetables to a separate pan and pour the remaining taco seasoning into the pan as well. Saute the vegetables on medium to high heat for about 5 minutes, and then add 1/2 cup of your favourite salsa. Saute for another 2 minutes or so.
Plate the peppers with a side of the salsa and enjoy them together!
