¼cuppeanut butter
¼cuplime juice
2tablespoonhoney
2tablespoongarlic - minced
1tablespoonrice vinegar
1tablespoonsesame oil
1teaspoonginger - ground
1pinchground black pepper - to taste
2poundground pork (minced pork) - reduced-fat
15ouncestomatoes - no-salt-added, drained and diced
8mediumhamburger buns
Instructions
Heat a nonstick skillet over med-high heat.
Meanwhile, in a small bowl, whisk together the soy sauce, chile sauce, peanut butter, lime juice, honey, garlic, rice vinegar, sesame oil, ginger, and black pepper until well mixed. Set aside.
Cook the ground pork in the skillet, stirring and crumbling the meat while it cooks.
Once it is cooked for about 5 to 7 minutes, whisk the sauce and pour into the skillet with the pork.
Stir and let simmer, occasionally stirring, until the pork is cooked through and the sauce thickens for 7 to 10 minutes longer.
