Broccoli Ingredients
¼cupolive oil
1teaspoonsalt - pepper, olive oil, garlic and onion powder
2cupsbroccoli - chopped
2cupscheddar cheese - grated
Gravy Ingredients
¼cupcoconut milk
1mediumonion - diced
1 ½cupbeef stock (beef broth or beef bouillon)
4tablespoonsbutter
1teaspoonsalt
1teaspoonground black pepper
Instructions
Preheat the oven to 325 degrees Fahrenheit, gather all the ingredients and combine with your hands in a big bowl. When that’s done, pour the meaty mixture into a meatloaf pan, place it into the oven and bake for approximately 70 minutes or until there is no pink.
Gather your seasonings and mix them in with your olive oil. Place your broccoli in a large ziplock bag and drizzle your olive oil over the broccoli; shake the heck out of it until well coated. Place onto an aluminium foil-lined baking sheet and stick in the oven for 15 minutes.
While the meatloaf and broccoli are doing their thing in the oven, it’s time to start on the gravy! Take a medium saucepan and place the butter and diced onion on medium heat for about 8 minutes. After that, add the beef stock, salt and pepper and bring to a boil. Add the coconut milk, and then lower the heat to a simmer for 10 minutes, occasionally stirring until thick.
The broccoli should be done by this time, so you’ll want to take it out of the oven and sprinkle your cheese on top for the finished product!
