Instructions
Place ground pork and chopped vegetables in a large mixing bowl. Add salt, pepper, sugar, corn starch, oyster sauce, soy sauce, sesame oil, wine/sake, ginger, and green onions to the mixing bowl. With clean hands, combine ingredients until well-blended.
Place 1 ½ teaspoon of filling in the center of each dough wrap. Dip your fingertips in a small bowl of water and wet the top edge of the dough. Fold in half, matching the dry edge to the damp edge and pleat to seal. (Note: This step is infinitely easier with an Asian dumpling press like the one pictured above.) Repeat with the remaining dough wraps.
Arrange the dumplings in a bamboo or stainless steel steamer and cook them for 8-10 minutes.
Serve immediately with dipping sauce. The recipe makes 36 dumplings.
